The changes i made were simple. I omitted the eggs and chose to add about 1/2 a Tbsp of cornstarch to the meat mixture. I also used gluten free flour for the batter. I omitted the egg in the batter as well therefore I used seltzer water and regular water . The result was fantastic!

I tried making these with pre ground chicken from the grocery store. It was so soggy with just the egg and salt that nuggets couldn't be formed. Are you supposed to ground your own chicken? Can I add breadcrumbs or something to make the chicken less wet that won't change the taste?
