    Instant Pot Carrots With A Sweet Honey Glaze

    These Instant Pot carrots are the quickest, easiest, and most delicious way to cook carrots. They are tender, filled with flavor, and take under 25 minutes to make! And all of that time is hands-off cooking. Serve these steamed honey glazed carrots beside any meal as a healthy side for dinner or the holidays, and they will instantly elevate your meal.

    The Best Instant Pot Carrots

    Carrots are such a versatile vegetable that can be eaten in so many ways. You can eat them raw, steamed, baked, sautéd, and even pressure cooked!

    With that said, making carrots Instant Pot style has become my favorite way to cook this nutritious vegetable.

    The pressure cooked carrots come out so tender and perfect every time! Plus, this recipe is super quick and easy to make, too - and that's always a plus in my book.

    By the way, I like to change up these carrots from time to time, and I'll give you all the details on those a bit later on as well. You know, just in case you want to level up your carrots!

    Also, I'll go over a few of my favorite recipes to pair these Instant Pot carrots with. I have a few recipes on the blog that go great with these. With that said, they're really perfect for a holiday meal served alongside these cheesy mashed potatoes or corn casserole!

    Ingredients

    The ingredients you'll need for this recipe are super simple pantry staples that you probably already have at home. 

    The only thing you might need to pick up is some fresh carrots. And make sure to stock up on them - I have a feeling you'll want to make this recipe more than once this week. 

    Anyway, here's everything you'll need to make Instant Pot carrots:

    • 8 Carrots, peeled
    • ½ cup Vegetable Stock
    • 2 Garlic Cloves, chopped
    • Salt and Pepper
    • 2 tbsp. Honey (optional)
    • 2 tbsp. Orange Juice (optional)
    • 1 Rosemary Sprig (optional)

    These ingredients couldn't be simpler, and many can be used in this carrot casserole or candied carrots recipe, two of my favorite carrot recipes! 

    Now, just so you know, this recipe only makes a few servings. So, if you want to make it for a big family dinner - or if you're hosting - just double, triple, or quadruple the recipe!

    By the way, you can use either regular-sized carrots or baby carrots to make this recipe! Either work really well, so feel free to change it up!

    How to Make the Best Instant Pot Carrots

    Ok, so these Instant Pot carrots are seriously the quickest and easiest way to cook carrots.

    They take under 25 minutes, the entire recipe is hands-off cooking, and all the ingredients cook in one pot! So you'll save so much time cooking and cleaning up.

    Now, get your ingredients together, and let's cook some carrots in the Instant Pot!

    Step 1: Cook Half The Ingredients 

    First, you will cook half of the ingredients that require a little more time.

    So, put the carrots (or baby carrots), vegetable stock, garlic, salt, and pepper in the Instant Pot and put the lid on.

    Then set the Instant Pot to cook at high pressure for 12 minutes. 

    While the first phase of cooking is taking place, you can start preparing your main dish!

    Step 2: Cook the Rest of the Ingredients 

    Once 12 minutes is up, release the steam and take off the lid when it is safe to do so. 

    Now, this is where the Instant Pot and its multi-use features come in handy - you can swap from pressure cook to saute without having to use two different pans!

    So, if you want to make some glazed carrots in the Instant Pot, all you have to do is add in the honey, orange juice, and rosemary sprigs and then switch the Instant Pot to the saute setting for 10 minutes - or until the liquid in the pot starts to thicken for softer carrots.

    Now, once it does, take the fork tender carrots out, put them on a dish drizzled with some of the glaze from the pressure cooker, and finish the sweet carrots with fresh rosemary.

    Finally, serve alongside your meal of choice, and enjoy!

    What To Eat With Instant Pot Carrots

    Something I love about these Instant Pot carrots is you can eat them alongside any meal you want!

    The flavors of the baby carrots truly blend with everything, so you can't go wrong.

    But with that said, here are some of my favorite meals to pair them with:

    • Chicken bryan
    • Fried spaghetti
    • Lamb breast
    • Chicken divan
    • Million dollar chicken casserole

    How To Store Cooked Carrots

    As I mentioned earlier, this recipe for Instant Pot Carrots will make about 2 carrot side dish servings. So if you serve them at dinner, odds are you won't have any leftovers! 

    But I recommend doubling or tripling this recipe because the cooked carrots are delicious leftover.

    You can store any leftovers you have in an airtight container in the fridge for up to 5 days.

    Then to reheat them, just put the cooked carrots in the microwave for a few seconds or until they reach your desired temperature.

    Or you could put the cooked carrots in a pot with the extra cooking liquid from the Instant Pot and warm on medium heat.

    Wrapping It Up

    If you end up trying out these pressure cooker carrots, I have a good feeling it will become one of your favorite ways to cook carrots. 

    They are perfectly cooked and flavorful, and the optional sweet glaze takes them right over the top!

    Also, this recipe is so versatile and nutritious, and it is a great way to get the kids to eat some vegetables. My daughter loves when I make Instant Pot carrots for her. Seriosuly, she can't get enough of them.

    And, honestly, anytime I serve these steamed carrots at a family get-together, the kids enjoy them as much as the adults!
