INGREDIENTS
Something else I love about this recipe is that you only need 3 main ingredients.
And everything else is household cooking ingredients that I guarantee you have already.
Here is what you'll need:
- 3 Pairs of Italian Sausages (total of 6 pieces)
- 3 Bell Peppers (1 Red, 1 Yellow, 1 Green)
- 1 Medium Purple Onion
- 3 tablespoon Olive Oil
- Salt and Pepper
And if you want to make the side of rice:
- 1 Cup of Rice
- 1 ¾ Cup of Vegetable Broth
If you are making the side of rice, feel free to use any kind of rice you want, like white or brown rice. And if you want to keep the carb count down, you can use cauliflower rice.
Oh, and if you are going to the store to pick up some bell peppers, grab a few extras - you can use them to make these sheet pan chicken fajitas next!
SAUSAGE TO USE
So, to make the pressure cooker sausage, you have the freedom to use any sausage you want!
I like to use mild Italian sausage because it has a great flavor and not much spice. However, if you want this dish to be on the spicier side, you can use medium or hot sausage.
And there are plenty of other sausages you can use in this recipe, like chicken sausage, turkey sausage, kielbasa, andouille, or even bratwurst. All of them cook up perfectly in the pressure cooker.
You could even do a mix of sausages in the instant pot - this makes it perfect for a family meal because everyone can choose their spice level or type of sausage they want!
HOW TO MAKE SAUSAGE AND PEPPERS IN THE INSTANT POT
Pressure cooking sausage and peppers is so simple - all you really have to do is cut the vegetables and let the instant pot do the rest.
And this recipe makes about 4 servings, so you'll have a quick and easy family meal done in no time.
Now let's get to it!
STEP 1: PRESSURE COOKING THE SAUSAGES
First, set the instant pot to the saute function for 10 minutes. Then pour the olive oil into it and add in all six pieces of sausage.
Cook for 10 minutes or until the sausages brown and the internal temperature reaches 160 degrees Fahrenheit (71°C).
STEP 2: COOK THE BELL PEPPERS AND ONIONS
While the sausages are pressure cooking, you can prepare the bell peppers and onions.
First, clean the bell peppers and onions and then cut them into strips.
Then, once the sausages are cooked, remove them from the instant pot and set them aside.
Next, set the it to the saute function again for another 10 minutes, add the sliced bell peppers and onions, and pressure cook them until they have browned, softened, and are translucent.
OPTIONAL STEP 3: COOK THE RICE
Now, if you want to make the rice, you can either cook it according to the directions on the package or use your instant pot.
If you are using the instant pot, set it to the rice function and add the rice and vegetable broth to the pot.
Then allow the rice to cook for the set time or until it reaches your desired doneness. Pressure cook for about 3 minutes on the "high" setting, and then the steam release will need to work for around 10 minutes.
STEP 4: SERVING
Anyway, once the rice has finished pressure cooking, put it on a plate and top with the peppers instant pot sausage and onions.
Or, if you want to serve Instant Pot sausage, peppers, and onions on a bun, add the rice on the side and enjoy!
STORING SAUSAGE AND PEPPERS
As I mentioned earlier, this easy recipe makes about 4 servings.
What is great about it is that you can easily double, triple, or even quadruple the recipe depending on how many people will be eating it.
And don't worry if you end up making too much - you can store all your leftover sausage, peppers, and onions in an airtight container for up to 4 days.
Then to reheat, either add everything to a pan and saute until warm, or heat in a 350°F (180°C) oven for about 10 minutes or until it reaches your desired temperature.
Of course, you can also just saute everything in the Instant Pot to warm it up too - we like to do that at our house.

- Prepare rice as desired in the Instant Pot with the Rice option or cook in a pot. If cooking in an instant pot, add rice and vegetable broth and cook on the rice option. If cooking in a pot, follow rice package instructions.
- When the rice is cooked, put it on a plate and top with the peppers, onions, and sausage. Enjoy!
