    This instant pot coconut rice is super fluffy and has a rich - slightly sweet - coconut flavor that compliments so many dishes. Plus, the pressure cooker makes this rice recipe so easy to make - just 20 minutes is all it takes.

    THE BEST INSTANT POT COCONUT RICE

    Typical rice on the stovetop can take upwards of 40 minutes, and the flavor is just so bland. 

    So, if you've been looking for a flavorful rice recipe that's quick and easy to make - filled with flavor, and healthy too - look no further. 

    This coconut rice instant pot creation is incredibly simple to put together -has no prep involved - and is just delicious! 

    The coconut flavor is so light and refreshing, and there is just the perfect amount of it in the rice. And since it's got more of a subtle flavor it goes really well with a wide variety of dishes - like this chicken stir fry.

    Plus, since this instant pot coconut rice recipe only involves passive cooking - and nothing hands-on - you can let the pressure cooker work its magic while you prepare whatever you want to eat with the rice!

    My favorite dish to pair it with is this sweet and sour shrimp, but there are many other recipes that it goes really well with, and we'll go over them later. 

    That said, you don't have to pair it with anything. You can just eat it on its own - it's that good.

    INGREDIENTS

    Ok, so for this coconut rice recipe, you only need a few simple ingredients. 

    And I like to add a secret ingredient - cinnamon - that might seem out of place for rice, but it completely elevates the flavor and makes it taste so good. 

    Check out what you'll need:

    • 1 Cup Basmati Rice (or Jasmine Rice)
    • 1 Cup Water
    • 2 Tbsp. Coconut Milk
    • ¾ Cup Shredded Coconut 
    • 1 Tbsp. Olive Oil
    • 1 Tsp. Cinnamon 
    • Salt and Pepper
    • Shredded Coconut for topping (optional)

    Now, I highly recommend serving the rice warm with some extra shredded coconut on top. Although this is optional, if you want more of a coconut flavor, it is just incredible.

    What makes this rice healthy is that coconut has a ton of awesome health benefits! 

    And there's just nothing better than eating something healthy that actually tastes delicious. 

    Anyway, some of the health benefits of coconut milk are:

    • Reduced inflammation 
    • It's high in healthy fats (MCTs)
    • It's high in vitamins and minerals
    • & it's easier to digest than dairy milk

    • High in antioxidants

    HOW TO MAKE INSTANT POT COCONUT RICE

    Get ready because you are about to be blown away by how easy it is to make this coconut rice in the Instant Pot. 

    All it takes is about 10 minutes of cooking and 10 minutes of releasing steam, and then you'll enjoy the most delicious rice you've ever had.

    So, gather all of your ingredients, and let's get to it!

    STEP 1: SAUTEING THE COCONUT

    First, set the Instant Pot to the "sauté" setting and add in the olive oil, coconut milk, and shredded coconut.

    Then you can let those ingredients cook for about 5 minutes. And while they are cooking, you can rinse your rice - to remove any starch from it - so it is ready to go.

    STEP 2: COOKING THE RICE

    Next, add the rice, cinnamon, salt, and pepper, to the instant pot. 

    Then mix everything until all of the ingredients are well combined, and once they are, add in the cup of water.

    Now all you have to do is set the instant pot to high pressure and cook for 5 minutes.

    STEP 3: RELEASING THE STEAM

    When 5 minutes is up, you will need to slowly release the steam for 10 minutes. 

    To do this, turn the venting knob from the sealing to the venting position, and keep the knob open until the steam has stopped flowing and the floating valve has dropped.

    Once this happens, you can remove the lid and serve your warm coconut rice with some shredded coconut on top.

    HOW TO STORE COCONUT RICE

    This recipe will make about 4 servings of this deliciously flavorful coconut rice.

    And if you are serving it at dinner, odds are you won't have any leftovers! 

    But if you do, you can store your leftovers in an airtight container in the fridge for up to 4 days. 

    Then to reheat, either pop the rice in the microwave for a few seconds until warm or fry it up on the stove!

    FAQS ABOUT THIS INSTANT POT COCONUT RICE RECIPE

    Do I have to use basmati rice?

    No, you do not - you can use jasmine, long, medium, or short-grain white rice for this recipe!

    Do I have to rinse the rice before cooking it?

    For the best results, you should rinse any rice you use before cooking it. 

    Rinsing the rice removes the starch that is on the surface, and doing this will give the rice a better and more even texture while cooking instead of drying out.
