THE BEST INSTANT POT CORN ON THE COB
Corn on the cob is such a nostalgic side - I mean, I feel like I've been eating corn on the cob my whole life, whether it is at a family dinner, cookout, or holiday dinner.
And I think that the best way to cook corn on the cob is by using an instant pot.
Honestly, once you make corn on the cob instant pot style - that's how we like to call it in our house anyway - you'll never want to make corn another way again.
And I say that because the pressure cooker really makes corn turn out so incredibly tender, juicy, sweet, and bright tasting. It's just so fresh and delicious tasting - you really have to try it to know what I mean.
Plus, what's great about this recipe is the fact that Instant Pot corn takes just 10 minutes. You can't beat that, can you?
Also, since the entire thing only takes 10 minutes, you'll have plenty of time to put together a main dish, like this lamb breast, blackened shrimp, chicken fajita crunchwrap, or easy mac and cheese.
Now, even though all those recipes are great with this corn, my favorite is to eat it with these sloppy joes.
INGREDIENTS
So, you'll only need two ingredients - corn and water - to cook the corn on the cob in the Instant Pot.
And if you're opting to make elote out of the corn, then you probably have all - or almost all - of those ingredients at home too.
Here is what you'll need:
- 2 Corn On The Cobs
- 1 cup Water
- 1 tbsp. Butter (optional for topping)
And for the elote topping:
- ¼ cup Queso Fresco
- 2 tbsp. Mayonnaise
- Salt and Pepper
- ¼ cup Red Onion
- Fresh Cilantro
- Red Pepper Flakes
Now, if you want to keep it simple, you don't have to make the elote, but I highly suggest you do. It puts a whole new spin on plain-old-everyday corn on the cob - and it's just so good.

HOW TO COOK CORN ON THE COB
Ok, so making corn on the cob in an instant pot could not be any simpler. And the elote is really just as simple to put together!
So, in just 5 minutes, you'll have a delicious side dish that everyone will love.
Now, get your ingredients together, and let's get to it!
STEP 1: COOKING CORN ON THE COB IN AN INSTANT POT
First, place the cobs in the Instant Pot and pour in the cup of water.
Then set the instant pot to cook at high pressure for 2 minutes.
Once 2 minutes is up, release all the steam - to do this, turn the valve to the venting position, and when the valve drops, you can open the lid.
OPTIONAL STEP 2: MAKING THE DRESSING
While the corn is cooking, you can make the Mexican elote.
So, take out a small bowl and add in the queso fresco, mayo, salt, and pepper. Then mix these ingredients well to break down the queso fresco and combine everything.
Then when the pressure cooker is done cooking the corn, coat it with a little butter, and serve with the dressing on top and red onion, fresh cilantro, and red pepper flakes.
STORING THE CORN ON THE COBB
So, as you know, this recipe will make 2 corn on the cobs. But if you want more, you can always add more corn and adjust the dressing ingredients.
Then if you have any leftovers, wrap them in aluminum foil and put them in an airtight container in the fridge for 5 days.
And if you have dressing left, just put it in a separate airtight container and store it in the fridge for the same amount of time.
Then for the best way to reheat corn on the cob, preheat your oven to 400°F and place the corn in a baking dish with 1 tablespoon of water. Cover it with aluminum foil and heat for about 5 minutes or until warm.
