In fact, they're probably easier than the majority of the homemade cookie recipes you've made in the past. These sweet potato chocolate chip cookies require you to follow just a few simple steps. And, as far as hands-on cooking goes, you'll need to put in about 5 minutes' worth of work, and then the rest of the time is just baking time.

- ¾ cup mashed sweet potato
- 1 cup all-purpose flour
- 1 cup rolled oats
- 1 teaspoon gingerbread spice
- ¼ cup butter, unsalted, softened

- 1 teaspoon vanilla extract
- 1 small egg
- ½ cup chocolate chips

One option is to make them ahead of time, possibly for dinner the night before, and then you can use the leftovers for these cookies. Alternatively, if you don't want to do any extra work, feel free to use store-bought sweet potato puree or canned sweet potato.

How To Make Sweet Potato Cookies
As I've said a few times, these sweet potato cookies really could not be any easier to make. Basically, all you have to do is mix all of the ingredients together, form cookies from the batter, and then bake 'em.
It's literally almost as easy as counting to 3.
Anyway, with all that said, let's not waste another second, let's make sweet potato cookies!
Step 1: Mixing The Wet Ingredients
First, before you start on the cookie dough, you'll want to preheat the oven to 350°F (180°C) and line two small baking sheets - or one large baking sheet - with parchment paper.
Now you can take out a large mixing bowl and add the sweet potato mash, softened butter, and brown sugar to it. Then, you'll want to mix these ingredients with an electric hand mixer - or stand mixer - until they're smooth and combined.
Next, add the egg and vanilla extract to the bowl and mix again until they combine with the sweet potato mixture.
Step 2: Adding The Dry Ingredients
Now, once the wet ingredient mixture is good to go, you can add in the dry ingredients.
So, you'll want to add the flour, oats, and gingerbread spice to the bowl and gently mix them into the wet ingredients with a rubber spatula until everything just combines.
Lastly, to finish off the cookie dough, add the chocolate chips to the bowl and fold them into the dough.

So, this recipe for sweet potato cookies will make about 12 cookies. And one of my favorite parts about making them is how delicious the cookies are leftover.
Honestly, they taste even better the day - and days - after you make them. Seriously, there's really nothing better than having these cookies on hand all week long in the fall. So, I highly recommend doubling or tripling the recipe!
Then, as far as storing them goes, you can store the leftover sweet potato cookies in an airtight container at room temperature for about 5 days.
With that said though, if you don't think you'll finish the cookies off within that time you can freeze them for up to 6 months.
So, to freeze the cookies, you'll first want to put them on a baking sheet in the freezer and freeze them until solid. Then, once they're frozen, transfer them to an airtight container - or freezer-safe bag - for storing.
Now, as far as reheating the cookies, I love warming my leftover cookies up in the microwave. If you want to do that, just microwave 'em for about 5-10 seconds and enjoy. You can even serve the warm cookies in a bowl with vanilla ice cream for the ultimate treat!
