    These sweet potato cookies take mashed sweet potatoes and combine them with oats, chocolate chips, butter, gingerbread spice, and a few other simple ingredients to make a soft and chewy cookie that's out of this world good. Not to mention, these cookies are ridiculously easy to make too - just 3 steps are all you need to follow to whip 'em up. And the whole process will take only about 15 minute minutes!

    The Best Sweet Potato Cookies

    These sweet potato cookies are basically what the season of fall tastes like. They're filled with warm, yummy spices, and every single bite is loaded with chocolate chips.

    Seriously, after you taste just one bite of them you won't be able to put 'em down. These cookies are like the best chocolate chip cookie you've ever had, mixed with the best oatmeal cookie that you've ever had, mixed with some yummy sweet potato goodness.

    Plus, as I mentioned, they're so easy to make. Honestly, if you've ever made chocolate chip cookies before, then these will be a breeze to whip up.

    In fact, they're probably easier than the majority of the homemade cookie recipes you've made in the past. These sweet potato chocolate chip cookies require you to follow just a few simple steps. And, as far as hands-on cooking goes, you'll need to put in about 5 minutes' worth of work, and then the rest of the time is just baking time.

    Honestly, these cookies are a magical thing, and they've quickly become one of my family's favorite fall desserts. Well, along with these sweet potato muffins. So, if you want to treat your family to some of the best sweet potato recipes around, give both of them a shot!

    Ingredients

    Now, the ingredient list for these sweet potato cookies is really basic. If you've recently made chocolate chip - or oatmeal cookies - you'll definitely have most - if not all - of these ingredients in your kitchen right now.

    Anyway, here are the ingredients you'll need to make this sweet potato cookies recipe:

    • ¾ cup mashed sweet potato
    • 1 cup all-purpose flour
    • 1 cup rolled oats
    • 1 teaspoon gingerbread spice
    • ¼ cup butter, unsalted, softened
    • ½ cup brown sugar
    • 1 teaspoon vanilla extract
    • 1 small egg
    • ½ cup chocolate chips

    A pretty simple ingredient list for some extraordinary cookies, right?!

    Oh, and you can use many of these ingredients to make these homemade crumbl cookies. It's another delicious take on oatmeal chocolate chip cookies. Or if you're looking for something a little different, you can use some of them to make these white chocolate macadamia nut cookies or these Toll House cookie bars.

    Sweet Potatoes To Use

    So, as you can see from the ingredient list, we'll be using mashed sweet potato as one of the main ingredients to make these sweet potato cookies.

    And, for the mashed sweet potato, you have a few different options you can go with. One option is to make them ahead of time, possibly for dinner the night before, and then you can use the leftovers for these cookies. Alternatively, if you don't want to do any extra work, feel free to use store-bought sweet potato puree or canned sweet potato.

    Just so you know, though, whatever you decide to go with, you can use the same thing to make this sweet potato pecan pie or sweet potato pound cake next!

    How To Make Sweet Potato Cookies

    As I've said a few times, these sweet potato cookies really could not be any easier to make. Basically, all you have to do is mix all of the ingredients together, form cookies from the batter, and then bake 'em.

    It's literally almost as easy as counting to 3.

    Anyway, with all that said, let's not waste another second, let's make sweet potato cookies!

    Step 1: Mixing  The Wet Ingredients

    First, before you start on the cookie dough, you'll want to preheat the oven to 350°F (180°C) and line two small baking sheets - or one large baking sheet - with parchment paper.

    Now you can take out a large mixing bowl and add the sweet potato mash, softened butter, and brown sugar to it. Then, you'll want to mix these ingredients with an electric hand mixer - or stand mixer - until they're smooth and combined. 

    Next, add the egg and vanilla extract to the bowl and mix again until they combine with the sweet potato mixture.

    Step 2: Adding The Dry Ingredients

    Now, once the wet ingredient mixture is good to go, you can add in the dry ingredients.

    So, you'll want to add the flour, oats, and gingerbread spice to the bowl and gently mix them into the wet ingredients with a rubber spatula until everything just combines.

    Lastly, to finish off the cookie dough, add the chocolate chips to the bowl and fold them into the dough.

    Step 3: Baking The Cookies

    Now that you have a delicious cookie dough formed, it's almost time to bake the cookies!

    First, grab a large spoon - or cookie scooper - and make about 12 two-tablespoon-sized dough balls out of the dough. Place the cookie dough balls on your baking sheets and flatten the tops slightly, spreading the dough out with the back of a spoon.

    Just keep in mind that depending on the size of your baking sheet, you might need to bake the cookies in two batches.

    Finally, bake the cookies for about 10-12 minutes or until they reach your desired doneness. Then, when the cookies are done cooking, cool them on the tray for a few minutes before transfering them to a wire rack so they can cool completely.

    And, of course, as always enjoy!

    How To Store Sweet Potato Cookies

    So, this recipe for sweet potato cookies will make about 12 cookies. And one of my favorite parts about making them is how delicious the cookies are leftover.

    Honestly, they taste even better the day - and days - after you make them. Seriously, there's really nothing better than having these cookies on hand all week long in the fall. So, I highly recommend doubling or tripling the recipe!

    Then, as far as storing them goes, you can store the leftover sweet potato cookies in an airtight container at room temperature for about 5 days.

    With that said though, if you don't think you'll finish the cookies off within that time you can freeze them for up to 6 months.

    So, to freeze the cookies, you'll first want to put them on a baking sheet in the freezer and freeze them until solid. Then, once they're frozen, transfer them to an airtight container - or freezer-safe bag - for storing. 

    Now, as far as reheating the cookies, I love warming my leftover cookies up in the microwave. If you want to do that, just microwave 'em for about 5-10 seconds and enjoy. You can even serve the warm cookies in a bowl with vanilla ice cream for the ultimate treat!

    Well, that's how to make sweet potato cookies!

    These easy sweet potato cookies are truly ones that everyone will remember. They have an out-of-this-world taste and texture, they're healthier than most cookies, and they are just so darn good!

    Ingredients

    ¾ cup mashed sweet potato

    1 cup all-purpose flour

    1 cup rolled oats

    1 tsp gingerbread spice

    ¼ cup butter, unsalted, softened

    1 tsp vanilla extract

    1 small egg

    Instructions

    1. Preheat oven to 350°F (180°C). Line one large or two small cookie sheets with parchment paper. 
    2. In a mixing bowl, beat the sweet potato mash, softened butter, and brown sugar until smooth. 
    3. Add the egg and vanilla extract. Beat well to combine.
    4. Fold in the flour, oats, and gingerbread spice with a rubber spatula. Stir until just combined. Finally, fold in the chocolate chips.
    5. Drop the cookie dough using a 2-tbsp size cookie scoop on a baking sheet. Spread the tops of the cookie dough with the back of the spoon.
    6. Bake the cookies for about 12 minutes. Cool them completely before serving, as they will firm up during the cooling process.
