    These no bake cheesecake bites are the perfect dessert for any occasion. A tender, buttery mini graham cracker crust is topped with a rich, creamy cheesecake filling that is just to die for! And the best part is that you don't even have to turn on your oven to make these little bites of heaven!

    The Best No Bake Cheesecake Bites

    These no bake cheesecake bites have everything you love about classic cheesecake but in mini bite-sized form. 

    They're ideal when you're craving cheesecake but don't want to make an entire thing. And they're way more convenient to serve at a party than a whole cheesecake. Everyone can just grab a few cheesecake bites and eat them with their hands instead of having to sit down with a fork & plate. 

    With that said, the best part about this no bake cheesecake recipe is it only takes about 10 minutes to prep these little bites of deliciousness. Then, all you have to do is wait for the no bake cheesecake filling to set in the fridge, and you're ready to indulge.

    And since you can leave them chilling in the fridge, this is a great make-ahead recipe to have ready to go whenever you need it!

    Ingredients

    To make these no bake cheesecake bites, you only need a few super simple ingredients. And everything this recipe calls for is used to make a classic cheesecake, so there'll be no surprises here.

    Here's what you'll need to make these mini cheesecake bites:

    • 1 cup Graham Cracker Crumbs
    • ¼ cup Butter, melted
    • ½ cup Heavy Cream
    • 8 oz. Cream Cheese, room temperature
    • ⅓ cup Sugar
    • ½ Lemon, squeezed
    • 1 tsp. Vanilla Extract
    • Fresh Berries, for topping

    Not bad, right?

    And like I said, these ingredients are the same ones used to make really any classic cheesecake recipe. So, if you stock up on them you can make this Philadelphia no bake cheesecake or no bake cheesecake with cool whip next!

    Toppings For These Mini Cheesecake Bites

    Now, these no bake cheesecake bites are delicious with nothing on top, but if you want to take them to another level, you can add a variety of toppings! 

    I personally like to keep it classic and just use some fresh berries for my topping, but you can use any other cheesecake topping you desire.

    For instance, you can use this delicious strawberry compote for some strawberry cheesecake vibes.

    Or, you can drizzle it with some chocolate ganache, caramel sauce, or peanut butter. Then, add some whipped cream on top for a balance of textures.

    Honestly, anything you would put on top of a regular cheesecake, you can use on these mini cheesecake bites!

    How to Make No Bake Cheesecake Bites

    As I mentioned, this no bake cheesecake bites recipe is extremely simple to make, and it'll only take you about 15 minutes of work.

    And this recipe makes about 8 mini cheesecakes, so just double or triple the recipe if you know you'll need more!

    Now, let's not waste another second and dive into how to make no bake cheesecake bites!

    Step 1: Make the graham cracker crust

    First, you'll make the graham cracker crust for the base of the cheesecake bites.

    To make the graham cracker crust, start by putting the graham crackers in a Ziploc bag and crushing them with a rolling pin until they turn into crumbs.

    Alternatively, you can put the graham crackers in a blender - or food processor - and blend pulse until you get a fine, grainy texture.

    Once the graham cracker crumbs are crushed, add them to a medium bowl. Then, add the melted butter to the bowl and combine it with the crumbs until the graham cracker mixture sticks together.

    Step 2: Building the Graham Cracker Crust

    Next, line a mini muffin/cupcake pan with cupcake liners and pour the graham cracker mixture into the slots. Depending on the size of your mini muffin pans, you may get 6 or 8 cheesecake bites.

    Oh, and do not skip the cupcake liners! If you do, it will be almost impossible to keep the base intact. 

    Then, use a small measuring cup - or a spoon - to press the graham cracker mixture into the bottom of the liner until it's solid. Now you can set the muffin pan in the fridge and move on to the filling.

    Step 3: Preparing the Filling

    So, to make the no bake cheesecake filling, add the heavy cream, softened cream cheese, sugar, lemon juice, and vanilla extract to it.

    Now, mix all of the filling ingredients together until you have a smooth, creamy mixture.

    Step 4: Building The Cheesecake bites

    Next, take the mini muffin pan out of the fridge. Then, use a spoon to scoop the cheesecake filling evenly on top of each graham cracker crust and smooth it out. 

    Once you have filled them all, refrigerate the mini cheesecake bites for about 4 hours - or until they easily separate from the cupcake liners.

    Now, once you can separate the bites from the liners, top them with fresh berries or any topping that you want and serve on a plate. 

    Then, eat 'em with your hands and enjoy!

    How to Store No Bake Cheesecake Bites

    As you know, this recipe will make about six or eight mini cheesecake bites. And they store super well, so don't worry about making too many!

    With that said, if you have leftovers, you can transfer them to an airtight container and store them in the fridge for up to 5 days.

    And if you want to prepare this recipe ahead of time, just keep the cheesecake bites in the fridge in the muffin pan until they are set, then transfer them to airtight containers until you need 'em.

    Yes, mini cheesecakes have to be refrigerated. Since there is no cooking involved and this recipe uses heavy cream and cream cheese, the mini cheesecakes have to be stored in the refrigerator.

    If you do not store them in the fridge the dairy ingredients will go bad incredibly quickly.

    How do you Harden No Bake Cheesecake?

    The best way to harden no bake cheesecake is by letting it set in the refrigerator. It will take about 2-4 hours for the cheesecakes to harden, so don't try to cut the time short. Also, even though it's tempting, the freezer is not a shortcut to having the cheesecake harden faster.

    You do not put eggs in a no-bake cheesecake. The only time that eggs are used in a cheesecake recipe - like to make this Biscoff cheesecake - is when the cheesecake is baked in the oven. Eggs are typically used in baked cheesecakes to achieve a thicker texture for the cheesecake filling.

    4 tbsps (¼ cup) Butter, melted

    ½ cup Heavy Cream

    8 oz. Cream Cheese, room temperature

    5. Scoop the mixture into the prepared muffin liners and smooth out the top. Refrigerate for at least 4 hours (or until you can easily separate the cheesecake bites from the liners).
