Ingredients

Scale

1 cup Graham Cracker Crumbs

4 tbsps (1/4 cup) Butter, melted

1/2 cup Heavy Cream

8 oz. Cream Cheese, room temperature

1/3 cup Sugar

1/2 Lemon, squeezed

1 tsp. Vanilla Extract

Fresh Berries, for topping

Instructions

  1. Crush graham crackers in a Ziploc bag, blender, or food processor.
  2. Mix the graham cracker crumbs and melted butter in a bowl.
  3. Line a mini muffin pan with muffin liners and add the crust (depending on the size of your mini muffin pans, you may get 6 or 8). Press the crust with a spoon until solid, and set in the fridge.
  4. In a large bowl, mix the heavy cream, cream cheese, sugar, lemon, and vanilla extract until smooth and creamy.
  5. Scoop the mixture into the prepared muffin liners and smooth out the top. Refrigerate for at least 4 hours (or until you can easily separate the cheesecake bites from the liners).
  6. Serve with fresh berries on top, and enjoy!
