    These easy microwave pancakes are oh-so buttery and pillowy soft! Plus, each bite of 'em is  packed with melty chocolate chips. Honestly, they're such delicious chocolate chip pancakes, you'd never believe they're cooked in the microwave and take just 5 minutes to make!

    The Best Microwave Pancakes

    Whenever I'm craving something sweet and satisfying for breakfast but don't want to make a huge mess or fuss, this quick pancake recipe is the first thing I think of.

    And making pancakes in the microwave may seem like a crazy idea, but the results might surprise you!

    These microwave chocolate chip pancakes are wonderfully light and soft, filled with yummy chocolate chips, and they stack up beautifully too. Top them off with maple syrup, and you're in for an absolute treat.

    Yup, you heard that right! These aren't the typical mug pancakes made in the microwave (although those are perfectly delicious too).

    This microwave pancake is flat, stackable, and looks just like a regular fluffy pancake. In fact, I've served more than a few stacks of these microwave pancakes to my family, and they couldn't tell the difference!

    Best of all, this microwave pancake recipe is incredibly easy, made with just a handful of basic ingredients, and is ready in as fast as 5 minutes.

    They're perfect to make in a dorm room or anywhere you don't have access to a stovetop but want some delicious pancakes. And if you want another microwave treat that's easy to make, you have to give these M&M chocolate chip cookie bars a try!

    Anyway, let's get into how to make 'em!

    Ingredients

    So, the ingredients for this microwave pancake recipe aren't that different from what you need to make regular old pancakes.

    In fact, all you need are 6 basic pantry staples and some maple syrup for topping.

    With that said, here's everything you'll need to prepare these chocolate chip microwave pancakes:

    • 2 tbsp. Softened Butter
    • ¼ cup Brown Sugar
    • 1 tsp. Vanilla Extract
    • 1 Egg
    • 6 tbsp. All-Purpose Flour
    • ¼ cup Chocolate Chips
    • Maple Syrup to serve

    By the way, if you'd like some other ideas for pancake toppings, here are some recommendations:

    • Honey
    • Sliced bananas 
    • Peanut butter or any nut butter
    • Chocolate syrup or any chocolate spread
    • Whipped cream

    Also, just so you know, you can make these into gluten free microwave pancakes by swapping out the all purpose flour with a gluten free flour blend. 

    And if you want to make a version with less sugar, you can swap the brown sugar for an equal amount of brown Swerve.

    Oh, and for what it's worth, you can use a lot of these same ingredients to make these double chocolate chips cookies or these microwave chocolate chip cookies. So you might want to save that recipe for dessert!

    How to Make Pancakes in a Microwave

    So this easy pancakes recipe makes 2 servings or about 4 pancakes. And these pancakes should take about 2 minutes each to cook in the microwave and about 3-5 minutes of prep time. From start-to-finish you're looking at less then 10 minutes.

    Anyway, let's get into the details of this microwave pancakes recipe!

    Step 1: Make the Pancake Batter

    First, combine the softened butter with brown sugar in a medium-sized bowl.

    Then, add the vanilla extract, egg, and flour to the bowl of creamed butter and sugar and stir until the pancake mix is creamy. Next, add the chocolate chips and gently fold them into the batter.

    Step 2: Cook Pancakes

    Next, grease a microwave-safe plate with a bit of butter - or neutral oil - to prevent the pancake from sticking.

    Then, pour a ¼ cup - or 4 tablespoons - of batter onto the center of the plate and spread it to your desired pancake shape.

    Microwave the pancake for about 2 minutes, then slide it off the plate and repeat the process with the rest of the batter.

    Also, just so you know, the microwave time will vary based on the power of your microwave. So, I recommend microwaving for a minute first, then microwave in 15-second increments until the pancake has cooked.

    Step 3: Stack and Serve

    Now once you've used all the batter, divide your pancakes into two stacks and serve with maple syrup, honey, or any other toppings you like on top.

    By the way, these pancakes are best enjoyed hot out of the microwave so you'll definitely want to eat each fluffy pancake right after you make 'em in there.

    These easy chocolate chip pancakes are as quick and simple as a breakfast recipe can get. I mean, all you need is a few simple ingredients, a microwave, and about 5 minutes to make them! No pans, stovetops, or flipping required.
