    The Best Cookie Bars

    This cookie bar recipe has to be one of the easiest and most delicious ways to enjoy cookies - or atleast the taste of cookies. I mean, these are basically soft and chewy cookies just in bar form.

    And what I love about 'em  is that they take under 10 minutes to make! Seriously. The cookie bars are made in the microwave, so you don't have to wait for them to bake.

    Oh, also, because all you need is a microwave, these cookies are the ultimate dorm room dessert!

    Now, I know you might be thinking that it's weird to microwave a cookie. But, honestly, it isn't. In fact, it's delicious!

    Seriously, these cookie bars are indistinguishable from ones that are baked, and they're just way quicker to make. So, when the cookie cravings hit, and you want something ASAP, you know what to do, make these cookie bars!

    Oh, and I have to mention, if you love cookies and M&Ms, then you have to give these 3 ingredient sugar cookies and chocolate M&M cookies a try next!

    Anyway, now let's get into the ingredients you'll need to make these delicious chewy chocolate chip cookie bars!

    Ingredients

    The ingredients to make these chewy cookie bars are the same as regular chocolate chip cookies. So, if you're a regular baker, you probably have all of them in your kitchen already.

    Anyway, here's everything you'll need to make these cookie bars:

    • 2 ½ Tbsp. Butter, softened
    • ½ Cup Brown Sugar
    • 1 Tsp. Vanilla Extract
    • 1 Egg
    • 1 Cup All Purpose Flour
    • ½ Tsp. Salt
    • ½ Tsp. Baking Powder
    • ¼ Cup M&Ms
    • ¼ Cup Chocolate Chips

    See? Super simple stuff!

    And if you're not stocked up on everything, this is your sign to do so. You can use all of these ingredients to make my chocolate chip oatmeal cookies and frosted sugar cookies too!

    Now, if you don't have M&Ms - or don't like them - you can just make this chocolate chip cookie bar recipe by adding in extra chocolate chips instead. And feel free to use any chips you want like mini, semi-sweet, milk chocolate, or even white chocolate. 

    As for the M&Ms, you can use mini, regular-sized, peanut butter, pretzel, or any kind of M&M out there.

    Anyway, now that you have your ingredients ready, there are only 10 minutes standing in the way of you and these delicious M&M chocolate chip cookie bars.

    How To Make M&M Chocolate Chip Cookie Bars

    As I mentioned before, this recipe is quick and easy to make.

    You don’t need an oven, a cookie sheet, or a baking experience (just the ingredients and a microwave).

    By the way, this cookie bar recipe makes about 4-8 bars, depending on how you cut them. So if you want more, just double or triple the recipe.

    Step 1: Cream the Butter and Sugar

    First, add the brown sugar and melted butter to a large mixing bowl. 

    Then, whisk the brown sugar and butter together until they are fully combined.

    Step 2: Add The Wet Ingredients

    Next, you're going to add the egg and vanilla extract to the sugar and butter mixture. Then, just give those ingredients a whisk until everything just combines.

    Step 3: Add The Dry Ingredients

    Now, add the flour, baking powder, and salt to the same bowl and mix everything together with a rubber spatula - or wooden spoon - until a cookie dough forms.

    Then, when you have a cookie dough consistency, add the chocolate chips and M&Ms into the bowl and fold them into the dough.

    Step 4: Cook in The Microwave

    Now that your cookie dough is ready, transfer it to a baking dish either lined with parchment paper or lightly greased with baking spray. I used a 4x4 inch baking dish, but any smaller size will work. All it will just change is the thickness of the cookie bars.

    Anyway, now you'll want to microwave it for about 2 minutes, and then microwave in 15-second increments until the cookie cake is done. You'll know it's finished cooking when a toothpick inserted in the center comes out clean.

    Step 5: Serve

    So, once your chewy chocolate chip cookie bars are fully baked, let them cool for a few minutes, and then cut them into about 4 or 8 bars. Enjoy!

    How to Store M&M Chocolate Chip Cookie Bars

    So, these cookie bars will almost be impossible not to finish off right after you make them. Especially if you have anyone with you!

    But, if you do have any left, you can store the bars in an airtight container at room temperature for up to 5 days.

    How to Reheat M&M chocolate chip cookie bars

    Of course, like any cookies, these can be enjoyed at room temperature.

    But, if you want to warm them up a little bit, just pop the cookie back in the microwave for about 8 seconds. And you could even add the warm cookie to a bowl of ice cream for a delicious cookie sundae! That's always a popular combo at our house.

    Ingredients

    2 ½ Tbsp. (35g) Butter, melted

    ½ Cup (100g) Brown Sugar

    1 Tsp. Vanilla Extract

    1 Egg

    1 Cup (130g) All Purpose Flour

    ½ Tsp. Salt

    ½ Tsp. Baking Powder

    ¼ Cup M&Ms

    ¼ Cup Chocolate Chips

    Instructions

    1. Whisk the butter and brown sugar together in a large bowl.
    2. Add the egg and vanilla extract to the bowl and whisk again.
    3. Add the flour, baking powder, and salt to the bowl and mix to form a cookie dough.
    4. Fold the M&Ms and chocolate chips into the dough. 
    5. Spoon into a baking dish lined with parchment paper or coated with baking spray (I used a 4x4 inch).
    6. Microwave for about 3 minutes (check after 2 minutes and microwave in 15-second increments until a tooth pick comes out clean when inserted in the center),
