This keto french fry recipe is easily the number one low carb appetizer or side dish you can make for the keto diet.
And I know what you're thinking. "But Joe, potatoes aren't keto. How can you make low carb fries out of them?"
Well, I'll let you in on a secret: this low carb french fry recipe doesn't have any potatoes in it!
And, let me tell you, although these keto fries aren't made with potatoes, they're just as delicious and taste almost exactly like traditional french fries.
They're crunchy on the outside and soft on the inside, perfectly salted, and go great with a side of keto ketchup or hot sauce.
Crazy, right?!
Oh, and did I mention that you only need just 3 ingredients to make them? One of which is water!
Seriously, you won't be able to find an easier keto french fries recipe out there than this one.

INGREDIENTS
Now, once again, you only need three ingredients to make these keto fries.
And the main ingredient of the fries is going to be the flour of your choice - almond flour or coconut flour.
For the almond flour version, you'll need:
- 1 Cup almond flour
- 3 Teaspoons xanthan gum
- 6 tablespoon hot water
And for the coconut flour version:
- Just less than ½ Cup coconut flour
- 3 Teaspoons xanthan gum
- 7-8 Tbsps. hot water
Of course, you'll also need your choice of oil and salt and pepper for cooking and seasoning the fries as well.
Oh, and by the way, I use almond flour and coconut flour to make these keto hush puppies and almond flour and xanthan gum to make this keto falafel.

KETO FRIENDLY FLOURS FOR KETO FRIES
So, as I mentioned above, for this recipe you can choose between almond flour and coconut flour to make keto fries.
But of course, there will be a few differences in the results depending on which one you use.
For example, coconut flour is a little sweeter than almond flour, which will have a slight effect on the final taste of the dish. Nothing too crazy, but it's just something to keep in mind.
Meanwhile, the almond flour has more of a neutral taste and results in a slightly denser french fry. And this will also create a more french fry like texture.
That said, if you don't have any almond flour available, you can substitute it with either walnut flour or sunflower seed flour at a 1:1 ratio. These flours have a similar carb count and consistency as almond flour, so they work perfectly as a substitute for it.
Whatever flour you decide to use will result in wonderfully crispy keto french fries that I think you'll love.
HOW TO MAKE KETO FRIES
Ok, now that we're all caught up on the ingredients, let's dive into the process!
You'll need just 15 minutes to make these low carb fries -plus 15 minutes of waiting time - and about 10-15 minutes to cook them for this recipe.
And, all you have to do for this recipe is 3 easy steps - make the dough, cut it into strips, and fry or bake it.
Yup, it's that simple!
STEP 1: MAKING THE DOUGH
So, you'll want to start by combining either your almond flour and xanthan gum, or coconut flour and xanthan gum in a mixing bowl.
Then, pour in your water and mix or knead everything until well combined - it should create a very sticky dough.
Also, make sure your water is HOT for this step! Just using cold, or room temperature water, won't have the same effect on the dough.
Now, once you've added the water, you'll want to let the dough rest for 15 minutes, just so that it becomes less sticky, and more "workable".
STEP 2: MAKING THE FRIES
So, after the dough has had a chance to rest, it should be a lot easier to work with.
And, at this point, you'll want to place it between 2 sheets of parchment paper, and roll it out into the shape of a rectangle - that's about ¼ centimeter in thickness.
Then, you'll want to cut the flattened dough into 25-30 slim strips to shape your keto french fries.
Now, once you've shaped them, it's time to cook them!
And you can choose to either fry them on the stovetop or bake them in the oven.
Feel free to experiment with both methods and see which one you like more.
STEP 3A: STOVETOP FRYING METHOD
To fry them on the stovetop, start by putting a generous amount of oil in a medium-sized pan over medium-to-low heat.
And you'll want to add enough oil to cover the fries, so a little over ¼ cm from the bottom of the pan should do the trick.
Then, once the oil is hot enough, gently place the dough strips into the pan, and fry them until golden brown on all sides.
Now, when they've turned golden brown, you can transfer them to a drying rack, or a plate lined with paper towels. I recommend using a paper towel-lined plate, as it will remove the excess grease from your fries and keep them from becoming soggy.
Lastly, sprinkle the desired amount of salt on the fries, and enjoy them alone or with your favorite dipping sauce!
STEP 3B: OVEN METHOD
Now, if you'd rather cook these in the oven, the first thing you'll want to do is preheat it to 400°F (or 200°C).
Then you'll want to line a baking sheet with parchment paper and grease it with oil.
Next, you'll want to arrange the strips of dough on the tray, and brush them with more oil. And try to be generous with the amount you use to make your french fries as crispy as possible!
So, after you've got the strips of dough coated with oil, you'll want to bake them for about 10-15 minutes.
By the way, while they're cooking, you'll want to move them around every 5 minutes or so to make sure they bake evenly on all sides.
Then, after they're done cooking, you'll want to transfer your finished keto fries to a drying rack or a plate lined with paper towels to eliminate the excess oil.
And, of course, at this point, you'll want to coat the fries with salt and pepper, or a seasoning of your choice!
HOW I RECOMMEND STORING THESE KETO FRENCH FRIES
So once you've had your fix of these crispy keto french fries, you'll definitely want to store the rest for later.
They will stay good in an airtight container in the fridge for 2-3 days.
And the best part about this recipe might be that it makes for excellent frozen french fries too.
So, if you always want to have keto fries on hand, make some extra, and you can store them in the freezer for up to 6 months.
MY FINAL THOUGHTS
Once I got a taste of these fries, I started making them weekly. And you'll probably end up doing the same.
Honestly, I make these all the time for my family & friends, and it blows their mind that they're low carb keto fries.

Ingredients
For the almond flour version, you'll need:
- 1 Cup (100g) almond flour
- 3 Teaspoons (8g) xanthan gum
- 6 tablespoon (60g) hot water
And for the coconut flour version:
- Just less than ½ Cup (50g) coconut flour
- 3 Teaspoons (8g) xanthan gum
- 7-8 Tbsps. (75-90g) hot water
Instructions
Frying Method:
- Place almond flour (or coconut flour) and xanthan gum in a mixing bowl and mix well.
- Add in hot water and mix/knead the dough until all the ingredients are blended together - it will be very sticky.
- Leave the dough to rest for 15 minutes.
- After it rests and sets, you can roll it out into the shape of a rectangle between 2 sheets of parchment paper until it reaches ¼ cm in thickness.
- Then when you've got it rolled out, cut it into about 25-30 slim strips (french fry shapes).
- Add in a generous amount of oil (enough to cover the fries) to a medium-sized pan and put it on medium to low heat.
- Gently place the dough strips in the pan and fry them till they are golden brown on all sides.
- Transfer them to a plate lined with paper towels to soak up any extra grease.
- Sprinkle salt on the fries and enjoy!
Oven Method:
- Preheat your oven to 400°F (or 200°C).
- Place the dough strips on a baking tray (lined with a baking sheet or parchment paper and greased with oil).
- Brush a generous amount of oil on top of the to-be French fries and bake until the fries are golden brown (10-15mins) - Toss them around every 5-ish minutes to make sure they bake evenly on all sides.
- Transfer the fries to a plate lined with paper towels (to remove access oil).
- Sprinkle with and enjoy!
