    Keto Falafel | The Best Easy Keto Falafel Recipe

    This keto falafel is crispy on the outside and tender on the inside with a delicious savory flavor. It makes for the ultimate keto appetizer, snack, side, or even main dish. And the best thing is that each one of these low carb falafel balls has just 2 NET CARBS!

    THE BEST KETO FALAFEL

    This easy keto falafel recipe is one of my favorite things to make right now. It is just so versatile, and I'm obsessed with how tasty these falafel balls are. 

    They have a balanced flavor of seasonings, the most addictive soft yet crunchy texture, and are super filling, while somehow still being so light. 

    Honestly, I'll go as far as saying these falafels are just as good as the "regular" kind. But I'm a little biased, so I guess you'll have to make them and see for yourself. 

    Oh, and this keto falafel recipe is a big hit with family and friends, and no one can ever tell they're low carb! Whenever I set these crispy falafel balls on the table, they're gone in a flash. 

    Plus, they're so simple to make. It only takes about 10 minutes of prep - if that - then they cook to crispy golden perfection in the oven in 35 minutes, or in the air fryer in 15 minutes!

    Oh, and since this falafel is low carb, vegetarian, and gluten-free, it accommodates various eaters, making it the perfect recipe to share.

    INGREDIENTS FOR KETO FALAFEL

    Ok, so, regular falafel is typically made with chickpeas and flour, and both are high in carbs and not really keto friendly.

    Luckily, it's easy to swap out both these carb-heavy ingredients without compromising the classic taste and texture of falafel.

    That said, here are the ingredients you'll need to make the,

    • 1 onion, chopped
    • 2 cloves of garlic
    • ¼ cup of cilantro
    • ½ cup of fresh parsley
    • 8 ounces of cauliflower
    • ½ cup of almond flour
    • 1 large egg
    • 1 teaspoon of xanthan gum
    • ½ teaspoon of ground turmeric
    • 1 tablespoon of ground cumin
    • 2 teaspoons of salt

    As you can see, it's mostly basic ingredients you probably already have at home or would pick up on your regular grocery run!

    And if you want more of a comforting recipe that uses many of the same ingredients, you have to try this keto cauliflower soup next.

    PICKING THE BEST FLOUR FOR KETO FALAFEL

    So, the best keto flour for this recipe, hands-down, is almond flour. 

    If you have an almond allergy or don't want to use it, DO NOT use coconut flour as a substitute. Coconut flour is extremely absorbent, and your falafel will end up incredibly dry and crumbly as a result.

    Instead, you can replace the almond flour with an equal amount of walnut flour or sunflower seed flour. Both are low carb flours that will work just as well in this recipe.

    HOW TO MAKE KETO FALAFEL

    As I mentioned, this keto falafel recipe is incredibly easy to put together. It's actually an easy 3-step process that involves, mixing, shaping, and baking - that's it!

    All you have to do is give the ingredients a few pulses in the food processor, roll them into falafel balls, and then bake them to perfection.

    Now let's get into making the recipe so you can bite into these addictive falafels ASAP!

    STEP 1: MIXING THE INGREDIENTS

    The first thing you'll want to do is preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.

    Next, chop your cauliflower into florets and blend them in your food processor until you get a chunky texture. Try not to overprocess your cauliflower since we'll be running it through again in a minute. Scrape the cauliflower chunks out of the food processor and put them in a bowl.

    Then add your onion, garlic, parsley, and cilantro into the empty food processor, and blend all of these ingredients until finely chopped.

    Finally, add the cauliflower chunks back in with the rest of the ingredients - the almond flour, egg, cumin, xanthan gum, turmeric, cumin, and salt - and blend until everything is just combined.

    STEP 2: SHAPING AND BAKING THE FALAFEL

    First, transfer the mixture from the food processor into a bowl. 

    Then gently form the falafel mixture into about 2 tablespoon-sized balls. 

    Arrange the falafels evenly on your prepared baking tray and bake them in the oven for about 35 minutes.

    Once they're baked, either enjoy your falafels hot from the oven or cooled and serve with your favorite low carb dipping sauce!

    KETO FALAFEL IN THE AIR FRYER

    You can also make this falafel in the air fryer. To cook them this way you'll want to preheat your air fryer to 375°F (190°C).

    Then, after you form all of your falafel balls, lightly grease your air fryer basket with baking spray and place the falafel in a single layer on the tray. 

    Give the falafel a light spritz with the baking spray and cook for 15- 20 minutes until golden and crispy. Make sure you flip your falafel halfway through cooking. 

    HOW TO STORE & REHEAT YOUR FALAFEL

    This recipe makes 10 falafel balls, and if they don't get eaten up fresh out of the oven, they are just as delicious leftover. 

    You can store your leftover falafel in an airtight container in the fridge for up to 4 days. And to store them for longer, you can freeze them for up to 3 months. 

    To freeze the falafel, place them on a baking tray lined with parchment paper, making sure they're evenly spaced and not touching. Place the tray in the freezer for a few hours until they're frozen, and then transfer them to a freezer-safe bag or airtight container. 

    My favorite part about freezing this falafel it is super easy to reheat - just evenly arrange them on a baking tray lined with parchment paper, and cook at 350°F (180°C) for around 15-20 minutes. Make sure to flip them halfway through cooking.

    NUTRITIONAL INFORMATION

    Once again, each serving of this low carb falafel comes out to just 2 NET CARBS. And it is pretty hard to believe since these taste so darn good.

    Ingredients

    8 ounces (230g) of cauliflower

    ½ cup (60g) of almond flour

    1 large egg

    1 teaspoon of xanthan gum

    ½ teaspoon of ground turmeric

    1 tablespoon of ground cumin

    2 teaspoons of salt

    Instructions

    1. Preheat oven to 400°F (200°C) and line a baking tray with parchment paper.
    2. Break the cauliflower into florets, place them into the food processor and blend until chunky. Scrape out the cauliflower and set it aside.
    3. Add onion, garlic, parsley, and cilantro into the food processor and blend until finely chopped.
    4. Add the cauliflower back in, along with the other ingredients (the almond flour, egg, cumin, xanthan gum, turmeric, cumin, and salt). Blend everything just until combined.
    5. Gently form the mixture into balls around 2 tablespoons in size.
    6. Place evenly on baking sheet and bake for 35 minutes.
    7. To air fry, spray the air fryer basket with cooking spray and place falafel in a single layer in the basket. Lightly spray falafel and cook for 15-20 minutes until golden and crispy, flipping halfway through.

        When you add the cauliflower back into the food processor, you add in all of the other ingredients too. Sorry for the confusion!

      The taste is great, but the batter for the patties stays very squishy.
      I went as far as to triple the xantham gum in hopes of firming the batter up a bit, which seemed to help.
      But even after an hour in the oven the falafels are so soft on the inside up to the point that they tear apart when trying to handle them (they don't stick to the baking pan or anything though.)
      What did I do wrong? Or what can I try?

        Hey Rich! Try using a tablespoon or about 7-10 grams of coconut flour in place of the same amount of almond flour. That should help.
