The Best Olive Garden Chicken Scampi

Olive Garden does a lot of things right, and the chicken scampi they serve is no exception.

Perhaps it's the combination of perfectly cooked bell peppers and aromatic white wine sauce, or maybe it's just the joy of having a giant bowl of pasta with crispy chicken that makes this dish so delicious.

Either way, if you love Olive Garden's chicken scampi, then you're going to love this homemade version. And, you know what the best part about this recipe is? You don't have to make a reservation or wait in that endless Olive Garden line to eat it.

Along with that though, this Olive Garden chicken scampi is a breeze to make. Just 4 simple and easy steps are all it takes to whip it up.

By the way, if you're looking for a few tasty side dishes to serve with this scampi I highly recommend pairing it with this Little Caesars crazy bread, garlic bread, these honey glazed roasted carrots, or these twice baked mashed potatoes.

    Ingredients

Ok, so this Olive Garden chicken scampi recipe calls for basic ingredients that are easy to get at your nearest grocery store.

Honestly, though, you might already have everything you need to make it in your kitchen already.

If anything, you'll just need to grab some colorful bell peppers - and maybe the chicken - and then you're ready to rock and roll!

Anyway, here's what you'll need for the chicken:

    • 1 Chicken Breast, cut into thick stripes
    • Salt and Pepper
    • ½ cup Flour
    • 1 tbsp. Italian Seasoning
    • 1 tbsp. Olive Oil

What you'll need for the pasta and vegetables:

    • 1 Lb. Angel Pasta Hair
    • 1 tbsp. Butter
    • ¼ cup Red Bell Pepper, sliced
    • ¼ cup Green Bell Pepper, sliced
    • ¼ Yellow Bell Pepper, sliced
    • ¼ Red Onion, sliced
    • 1 Garlic Clove, minced

Lastly, what you'll need to make the scampi sauce:

    • 1 cup Chicken Broth
    • ½ cup Dry White Wine
    • ½ cup Heavy Cream
    • ½ cup Parmesan Cheese
    • Parsley to serve

    And that's everything you need!

Now, I know it looks like a lot, but as I mentioned, it's really basic ingredients.

By the way, when it comes to noodles, you don't have to use angel hair pasta. You can actually use any pasta you want. With that said, I recommend angel hair pasta or spaghetti noodles if you want to make the dish just exactly like Olive Garden does.

Oh, and if you have some of these ingredients left over, you can use a lot of them to make this Olive Garden chicken and shrimp carbonara next!

An assortment of ingredients including plates and bowls of raw chicken, flour and seasoning mixture, sliced bell peppers, sliced red onion, oil, butter, cheese, salt, pepper, parsley, and white wine, with raw pasta on the counter.

How To Make Olive Garden Chicken Scampi

As I've mentioned a couple of times, this Olive Garden chicken scampi is super straightforward and easy to make. Seriously, after you make it once, you'll probably be able to make it again without even looking at the recipe!

Anyway, now let's dive on in!

A skillet cooking raw chicken that has been tossed in a flour and seasoning mixture, with raw ingredients surrounding the skillet including bowls of sliced bell peppers, cheese, butter, oil, garlic, and parsley.

    Step 1: Cook The Chicken

First, cut your chicken breasts into strips and season each strip with some salt and pepper.

Then, once you've got the chicken prepped you can prep the flour mixture for it. So, to do that, add the flour, Italian seasoning, salt, and pepper to a medium-sized bowl and mix until combined.

Now, once you've got that all mixed together, you can completely cover the chicken tenders in it. I like to do this in a plastic bag, but a sealable bowl will work great too.

Next, heat a non-stick skillet to medium-high and add the olive oil to it. Then, place the chicken tenders in the skillet so they are laying flat, and cook the chicken for a few minutes on both sides. You want each piece of chicken to be golden brown, and you also want each piece to reach an internal temp of 165°F.

Once that happens, remove the chicken tenders from the heat, and set 'em aside.

Step 2: Cook The Pasta & Veggies

So, while the chicken is cooking, you can prepare the other elements of this Olive Garden chicken scampi recipe.

First, cook the angel hair pasta according to the package instructions or to your desired doneness.

Then, slice up all of your veggies, and cook them in the same skillet that you cooked the chicken in. So, to do that, you'll want to add the butter, bell peppers, onion, and garlic to the pan and sauté everything for a few minutes until tender and aromatic.

Skillet containing cooked sliced bell peppers, red onion, and garlic. Surrounding the pan are plates of ingredients including cooked chicken, salt, pepper, parsley, and cheese.

    Step 3: Make The Sauce

By now all of the components should be cooked and ready to go so it's time to make the sauce.

And making it is super easy.

Just add the chicken broth, white wine, heavy cream, and parmesan cheese to the skillet with the veggies, then give everything a good mix, and let the sauce ingredients melt a little bit. Then, continue stirring the sauce intermittently until the sauce begins to lightly thicken.

    Step 4: Complete The Dish

Once the sauce has begun to thicken, add in the cooked pasta and toss to combine everything.

Then you can either slice the chicken into pieces and add it to the skillet to mix, or leave the chicken in strips and serve on top of the pasta.

Lastly, transfer this chicken scampi to a plate - or bowl - and top with some fresh parsley and a sprinkle of grated parmesan cheese.

How To Store Olive Garden Chicken Scampi

This recipe for OIive Garden chicken scampi will make about one super large serving, or two servings that are the perfect size for a meal.

With that said, if you want to serve this as a family dinner, I recommend doubling or tripling the recipe. And don't worry about making too much because this pasta dish also makes for awesome leftovers.

Just keep in mind that since this pasta has chicken in it, it'll stay good in the fridge for up to 4 days. However, if you just want to keep the pasta, you can store it for up to 5 days.

    How to reheat chicken scampi

As I mentioned, this meal makes for some fantastic leftovers.

And, of course, if you have leftovers you'll no doubt want to reheat them. My favorite way to reheat my leftover chicken scampi is by adding everything back to a skillet with a splash of broth and heating it on medium-heat until warm.

Alternatively, you can reheat everything in 20-second increments in the microwave, stirring between each one until warm.
