- 1 Tbsp. fresh rosemary
- 1 Tbsp. fresh thyme
- 2 Tbsp. garlic powder
- salt and pepper
- ½ stick butter

Just keep in mind your filet mignon roast will take slightly less time to sous vide since it's a smaller cut of meat. HOW TO MAKE SOUS VIDE BEEF TENDERLOIN
This recipe truly is the easiest way to cook beef tenderloin. And whether you're new to cooking sous vide or you do it all the time, I guarantee you'll have no trouble making this recipe.
So, with that said, let's stop wasting time and get to it!
STEP 1: PREPARE THE BEEF
First, you'll want to whip up the seasoning blend. To do this, combine the rosemary, thyme, garlic powder, sea salt, and black pepper in a mortar and mix them together until they're fully combined.
Then you can coat your beef tenderloin with the seasoning and make sure to pat it down so it's nicely packed against the beef.
After you've done that, you can place the seasoned beef in a plastic bag, or sous vide bag and remove the air with a vacuum sealer.
STEP 2: SOUS VIDE THE BEEF
Now you can place the plastic bag and sous vide cooker in your sous vide water bath. Once the bag is fully submerged, set it to cook for 2 hours at 140°F.
After the 2 hours are up, you'll want to remove the beef from the bag and set it on a plate lined with paper towels, then you can pat the beef dry to remove the excess moisture.
STEP 3: SEAR THE BEEF AND SERVE
Up next, take out a cast iron skillet, set it over medium heat, and add the butter to it. Once the butter has melted, add the minced garlic and herbs to the cast iron skillet and let everything cook for 2-3 minutes, stirring it around the pan.
Then you can add the sous vide beef tenderloin to the pan and sear it on all sides.
