    The Best No Bake Pumpkin Pie Recipe

    Pumpkin pie is a staple of fall and a must-have after Thanksgiving dinner. And this recipe just made it that much easier to enjoy pumpkin pie at a moment's notice.

    This no bake pumpkin pie is made with the perfect balance of pumpkin pie spice, pumpkin puree, and cream cheese. Then, all of that is finished off with some fresh whipped cream on top.

    Gah, this pumpkin dessert is just so good!

    Best of all though, this pie is made with just a handful of simple ingredients, and it takes just minutes to make. Not to mention, since it's a no bake pie recipe you don't have to fight for oven space when you make it. And I know - atleast for us - that's something that's always in high demand during the holidays.

    By the way, if you're looking for some other pie recipes to serve as a Thanksgiving dessert, I highly recommend making this old fashioned sweet potato pie, this fudge pie, or this canned peach pie. All of them go perfectly alongside this pumpkin pie spice pie.

    Ingredients

    As I mentioned before, this is a super easy pumpkin pie recipe that's made with just a handful of simple ingredients. In fact, the majority of them are used to make a traditional pumpkin pie, so there will be no surprises here.

    Anyway, here's everything you'll need to make this no bake pumpkin pie:

    • 8 oz. Cream Cheese
    • 1 ½ cup Pumpkin Puree
    • ½ cup Heavy Cream
    • ½ cup Brown Sugar
    • 1 tsp. Vanilla Extract
    • ½ tsp. Ground Nutmeg
    • ½ tsp. Ground Cinnamon
    • ½ tsp. Ground Ginger
    • 1 (9 inch) Pie Crust, baked

    And for topping off the pie:

    • Whipped Cream
    • 1 tbsp. Sugar
    • 1 tbsp. Cinnamon

    Ingredient Modifications and Substitutions

    So, keep in mind, all of these ingredients really combine to make the best no bake pumpkin pie ever, so you won't want to leave any out.

    Now, when I say that you need a baked pie crust, you can either pre-bake a pie crust, buy a graham cracker crust that doesn't need baking, or make your own graham cracker crust from scratch using the one in my no bake strawberry pie.

    As for the pumpkin puree, I recommend using pure canned pumpkin and not canned pumpkin pie filling because premade pumpkin pie filling will already have spices and sugar added. Since we're baking this pie from scratch, we want to add all the spices ourselves.

    How To Make This No Bake Pumpkin Pie Recipe

    As if this no bake recipe couldn't get any easier, just wait until you read through the steps!

    With just 10 minutes worth of prep time, plus some time chilling in the refrigerator, this is about as easy as a no bake pie recipe can get.

    So with that said, let's stop wasting time and get into how to make pumpkin pie!

    Pumpkin puree, brown sugar, cream cheese, and other ingredients in a white bowl.

    Step 1: Prepping The Crust and Making The Pumpkin Pie Filling

    First things first, you'll want to bake the pie crust according to the package instructions or make your own pie crust or graham cracker crust. And if you're using a graham cracker crust that you bought from the store, you can just move on to making the pumpkin mixture.

    So, to make the pumpkin pie spice filling, you'll want to combine the cream cheese, pumpkin puree, heavy cream, brown sugar, vanilla extract, ground nutmeg, ground cinnamon, and ground ginger with a hand mixer - or stand mixer - in a large bowl.

    Then, once that pumpkin mixture is well combined, you can move on to the next step.

    Step 2: Complete The Pie

    Now all that's left to do is pour the pumpkin pie mix filling on top of the baked pie crust and chill! And speaking of chilling the pie, you'll want to refrigerate it for about 3 hours or until it sets.

    Step 3: Make The Cinnamon and Sugar Topping

    When the pie is almost done chilling, add the tablespoon of cinnamon and sugar to a bowl and mix it to combine.

    Now, this cinnamon sugar topping is optional, but I think it adds a delicious element and brings out the pumpkin spice flavors. So, I highly recommend adding it.

    Step 4: Slice and Serve

    So, once your pumpkin pie spice pie has fully set, go ahead and pull it out of the refrigerator.

    Then, top the pie with as much whipped cream as you want (or homemade whipped cream if you're feeling extra), and finish it off with some cinnamon sugar on top of the pie.

    Lastly, slice your no bake pumpkin pie, serve, enjoy!

    How To Store No Bake Pumpkin Pie

    This recipe for no bake pumpkin pie will make enough for about 8 slices. But, if you have more desserts being served you can cut it into smaller slices if you want!

    Then, if you happen to have any leftovers, you can either wrap the pie dish tightly with plastic wrap or transfer the slices into an airtight container and store them in the fridge. Stored like this, the creamy pumpkin pie will last for up to 4 days.

    And, to be honest, I actually recommend premaking this pie a day before serving it. It just gives all of the flavors enough time to combine and develop. So, if you're thinking about making this no bake pie for Thanksgiving don't be afraid to make it a day or two ahead of the holiday.

      I made this for thanksgiving but I only used cinnamon and it is the best!! No need for whipping cream. They will gobble it up!
