If you love kielbasa sausage, this kielbasa sausage and potatoes casserole is about to become your new favorite casserole recipe!
It has savory kielbasa sausages that are cooked until browned, then mixed in with perfectly cooked potatoes and a decadent and cheesy cream sauce. Everything's piled in a casserole dish and smothered in even more ooey-gooey melty cheese.
The results are a warm, hearty, decadent kielbasa sausage and potato casserole that just explodes with flavor in every bite.
Since making this smoked sausage casserole is such a breeze, it's one of my go-to casserole recipes for those hectic weeknight dinners. It's perfect on its own, but it's even more delicious served with some Texas Roadhouse rolls to soak up that cheesy homemade sauce.

As I just mentioned, the ingredient list for this kielbasa recipe is simple.
Here's everything you'll need to make it:
- 3 cups peeled, cubed potatoes
- 1lb. kielbasa sausage, sliced
- 4 tbsp. butter
- 4 tbsp. flour
- 2 cups heavy cream
- Salt and pepper, to taste
- 1 ½ cup shredded cheddar cheese
By the way, if you have to run to the store for kielbasa sausage, do yourself a favor and grab a second package so you can make this sausage green bean and potatoes casserole next. It's another one of my go-to casserole recipes, but the sauce is less creamy, and there are more veggies. Or, you can use the kielbasa to make this kielbasa and sauerkraut, kielbasa pasta, or dirty rice with sausage.
How To Make Kielbasa Casserole
1. Prep work: Preheat the oven to 350°F (180°C). Grease an 8x8-inch baking dish with nonstick cooking spray and set it aside.
2. Boil the potatoes: Add water and one tablespoon of salt to a large pot and bring the water to a boil. Once the water is boiling, add the potatoes and boil for 20 minutes. As soon as the potatoes are fork-tender, drain the water and transfer the potatoes to a large bowl.
3. Sauté the kielbasa: Set a large nonstick skillet over medium heat and slice kielbasa. Add the kielbasa to it and sauté the sausage, turning frequently until it's lightly browned on all sides.
4. Make the sauce: Remove the sausage from the pan and add the butter to it. As soon as the butter is melted, whisk in the flour. Allow this mixture to cook for about a minute while whisking constantly. Slowly add in the heavy cream, whisking, until it is incorporated with the butter and flour. Continue cooking until the sauce has thickened.
5. Add cheese to the sauce: Add a half cup of shredded cheddar cheese to the sauce and season it to taste with salt and pepper. Stir constantly until the cheese has fully melted and the sauce is smooth.
6. Assemble the casserole: Transfer the cooked potatoes and kielbasa sausage to the prepared baking dish and spread them out. Pour the cream sauce evenly over the potatoes and sausage, then sprinkle the casserole with the remaining shredded cheese.
7. Bake and serve: Bake for 30-40 minutes or until the casserole is golden brown on top. Serve warm right out of the oven, and enjoy!
Tips To Make The Best Recipe
- Swap the cream sauce for any condensed cream soup, like cream of mushroom soup, chicken soup, or celery soup, for a different flavor.
- Use chicken broth instead of cream for a leaner casserole with less saturated fat.
- Instead of cubed potatoes, use hash browns for a different texture. If using frozen hash browns, just remember to let them thaw overnight and squeeze the excess moisture out with a paper towel so the casserole doesn't get soggy.
- You can make the casserole with other types of sausage, like breakfast sausage, spicy Italian sausage, or even apple-chicken sausage, if you can't find sausage kielbasa at the store.
- Add veggies, like chopped red bell pepper, spinach, minced onion, or green beans for a healthier casserole.
- Garnish the finished casserole with sliced green onion and a dollop of sour cream for extra flavor and a pop of color.
How To Store Kielbasa Casserole
In the fridge: Store leftover kielbasa casserole in an airtight container or in the baking dish with a lid on and keep it in the fridge for up to 3-4 days.
In the freezer: Allow the leftover casserole to cool completely, then transfer it to a freezer-safe container or freezer-safe bag and freeze it for up to 2 months.
Reheating: Transfer the leftover casserole back to a baking dish and bake at 350°F for 10 minutes or until it reaches your desired temperature. For frozen potatoes and sausage casserole, let it thaw overnight in the fridge first or add more reheating time.
