It's also super simple to whip up too.
Just a handful of steps are all you have to follow to make this ground beef and potato casserole recipe. I'm not going to lie, I usually enlist the help of my two-year-old when I put it together since number one, it's free labor, and number two, there are no crazy cooking techniques used to make it. So, if you have kids like I do, don't hesitate to let them give you a hand. I know my daughter always has fun.
By the way, if you're looking for a tasty side dish to serve with this casserole my go-to is usually these Texas Roadhouse rolls. Not only are they delicious in their own right, but they're the perfect vessel to soak up that delicious creamy sauce too.

How To Make Ground Beef and Potato Casserole
1. Prep work: Preheat the oven to 350°F (180ºC) and lightly grease a casserole dish with nonstick cooking spray or butter.
2. Cook the ground beef and veggies: Heat a non-stick skillet on medium-high heat and brown the beef. Once the beef is nicely browned on all sides, add the diced onions and mushrooms and cook for a few more minutes until the onion is translucent. Add the potatoes and Worcestershire sauce and mix well to combine everything together.
3. Make the cream sauce: Add the butter and flour to a separate large skillet. Cook for a couple of minutes until it has the consistency of a thick paste and a film has formed in the bottom of the skillet. Then add the milk and broth and cook for a couple of minutes until it thickens. Add the sour cream to the soup mixture and mix well.
4. Assemble the casserole: Transfer the ground beef mixture to your prepared baking dish and spread it out evenly. Top it with all of the cream sauce and finish it off with the shredded cheddar cheese.
5. Bake and serve: Cover the dish with aluminum foil and bake it for about 1 hour. Serve the casserole warm with fresh parsley on top, and enjoy!
My Pro-Tips
- Break the ground beef apart as it cooks so it can brown on all sides.
- Swap the beef broth for cream of mushroom soup or cream of cheddar cheese soup for a different flavor.
- Swap the sour cream for cream cheese for a more decadent casserole.
- Use russet potatoes for the best texture.
- Experiment with adding ingredients to the ground beef as it cooks, like garlic powder, chili powder, or diced bell pepper for more flavor. You can even spice it up a bit by adding some hot sauce to it.
My Recommendations For Storing And Reheating The Casserole
In the fridge: Store any leftover casserole in an airtight container - or in the casserole dish with the lid on it - and it'll stay good in the fridge for up to 4 days.
In the freezer: Allow the leftover ground beef casserole to cool completely. Then, transfer your leftovers to an airtight container - or freezer-safe bag - and then you can freeze it for up to 3 months.
Reheating: Transfer the casserole back to a baking dish and warm it in the oven at 350°F for about 10-15 minutes or until it's fully reheated. Alternatively, if you want to warm it up even faster, you can microwave your leftovers in 1-minute increments until they're warm. Usually when I warm them up this way it takes just 1-2 minutes for it to heat up.
