Taco night is by far my family's favorite night. When we want a delicious taco seasoning flavor but aren't in the mood for traditional tacos, we always make this potato taco bake recipe.
This cheesy potato taco casserole is filled with taco seasoned ground beef, a slightly spicy tomato sauce, peppers and onions, and fork-tender potatoes. Topped with melty cheddar cheese and serve with sour cream, your Taco Tuesday will never be the same!

- 1 lb. Bag of Diced Potatoes (I used southwest seasoned potatoes)
- 2 Cups Mexican Shredded Cheese

How To Make Taco Potato Casserole
1. Cook the ground beef: Before you do anything else, preheat the oven to 350°F (180ºC) and spray a 9x13 baking dish with nonstick cooking spray. Heat a large skillet over medium-high heat and add the ground beef to it. Cook until it's browned on all sides, then add in the taco seasoning and follow the package instructions.
Step 2: Cook the onions and pepper: Add the onions and peppers to the skillet. Let them cook with the beef for 5-10 minutes or until soft. Stir in the diced tomatoes and tomato sauce and mix to combine everything.
3. Build the casserole: Evenly place the diced potatoes on the bottom of the prepared casserole dish. Top the potatoes with the prepared meat mixture and sprinkle the shredded cheese on top.
4. Bake: Put the casserole in the oven and bake for 30 minutes or until the cheese is melted and bubbly. Let it cool for a few minutes and serve warm.
