This instant pot corn on the cob is the quickest and easiest way to cook corn on the cob. It comes out perfect, and I included a Mexican dressing to top off the corn for a flavor that you won't find anywhere else. 

Ingredients

2 Cobs of Corn - shucked

1 cup Water

1 tbsp. Butter

Mexican Dressing:

¼ cup Queso Fresco

2 tbsp. Mayonnaise

Salt and Pepper

¼ cup Red Onion

Fresh Cilantro

Red Pepper Flakes

Instructions

  1. Place the cobs in the Instant Pot's trivet, add the water, and cook at high pressure for 2 minutes.
  2. Release all the steam and open.
  3. Spread butter on the cobs, and enjoy.
  4. For the Mexican dressing: mix queso fresco, mayonnaise, salt, and pepper in a small bowl. Serve over cobs with red onion, fresh cilantro, and red pepper flakes.
