    This instant pot potato salad has everything you love about classic potato salad, but it takes just over 10 minutes to make! And along with being super quick to whip up, this potato salad recipe is so flavorful and makes for one of the most versatile side dishes you can make.

    If you've never made potato salad instant pot style - that's what I call it anyway - you're in for a real treat. 

    Using a pressure cooker to make homemade potato salad is the ultimate side dish recipe hack. Honestly, it makes the process so much easier, and cuts the time it takes to make it by more than half!

    And honestly, I think this instant pot potato salad tastes so much better than the non-instant kind.

    INGREDIENTS

    So, the ingredients you need to make this instant pot potato salad are all simple ingredients typically used to create a delicious potato salad.

    And I have a few secret ingredients that totally elevate the flavor.

    Here is what you'll need:

    • 2 Big Yukon Potatoes
    • 1 Cup of water
    • 2 Hard Boiled Eggs
    • ¼ Cup Red Onion, chopped
    • ¼ Cup Pickles, chopped
    • ¼ Cup Mayonnaise
    • 2 Tbsp. Dijon Mustard
    • 1 Lemon, juiced
    • Chives or Green Onions
    • Salt and Pepper

    Now, if there is anything that you don't like or an ingredient you want to add in, feel free to make any substitutions to suit your tastebuds! 

    Oh, and this instant pot potato salad recipe makes about 4 servings. So if you are serving it at a party, you can easily double or triple the recipe!

    HOW TO MAKE POTATO SALAD IN INSTANT POT

    As I mentioned earlier, making potato salad in the instant pot is so simple - and way quicker than making it any other way.

    And all you really have to do is cut the potatoes and mix the ingredients, that's it!

    Oh, and you'll need two hard boiled eggs to make it, so you might want to prepare those - or buy them at the store - before starting anything else.

    Now gather your ingredients, get out your instant pot, and let's get cooking!

    STEP 1: COOKING THE POTATOES 

    First, place the potatoes and cup of water in the instant pot, and cook at high pressure for 10 minutes.

    Then when 10 minutes is up, release all the steam, take the potatoes out, and let them cool completely. 

    To release the steam, turn the venting knob from the sealed to vent position and keep it open until the steam has stopped flowing and the floating valve has dropped. And then you can open the lid. 

    STEP 2: MAKING THE POTATO SALAD

    Once the potatoes cool, remove the skin, cut them into cubes, and put them in a large bowl.

    Then add the hard boiled eggs, red onion, pickles, mayonnaise, and dijon mustard to the bowl. Mix everything until well combined and season with lemon juice, salt and pepper.

    To finish up, serve with some chives or green onions on top and enjoy!

    HOW TO STORE POTATO SALAD

    So, as I mentioned, this recipe makes about 4 servings. And depending on if you doubled or tripled the recipe, you might have some leftovers.

    If you do and want to know how long potato salad is good for, you can store it in an airtight container in the fridge for up to 4 days. 

    Just make sure that you don't leave it out at room temperature for more than 2 hours before refrigerating.

    Do I have to use mayonnaise?

    No, you can also use miracle whip, and it will turn out delicious!

    If you typically like miracle whip more than mayonnaise, I suggest using it to make your potato salad.

    What else can I add to this recipe?

    The best ingredient that I think you can add to this recipe is some bacon bits. It gives it a little smokey flavor - and a bit of crunchiness - that blends so well with the creamy potato salad.

    Do I have to use yukon potatoes?

    No, you can use any potatoes that you want to make this recipe! Some other good ones to use are russet potatoes and red potatoes.
