    The Best Strawberry Crunch Cake

    This strawberry crunch cake recipe creates a soft and fluffy cake that is filled with strawberries and topped with a homemade vanilla frosting. Basically, if you love strawberries and vanilla cake, you're going to love this recipe!

    And, as I said just a second ago, not only does this cake taste as if it came from a bakery, it looks like it did too. So, this crunch cake is one that you'll definitely want to make for a birthday party or a special occasion that you want to wow your guests with dessert.

    And even though it looks and tastes out of this world, this strawberry cake is actually really easy to make. Just a few classic cake ingredients - and about 10 minutes of prep - are all you need to bring this epic dessert to come to life!

    Anyway, now let's get into the ingredients you'll need to make this strawberry crunch cake.

    On a cake stand sits a whole strawberry cake on a serving plate. It's topped with dried strawberries, crumbled cookies, frosting and fresh sliced strawberries.

    Ingredients

    So, as I mentioned above, this strawberry crunch cake recipe uses common baking ingredients that you'd find in really any other homemade cake.

    With that said though, I've broken the ingredients into three parts - the cake itself, the frosting, and the crunch topping - to make it easier for you to visualize the ingredients you'll need for each part.

    Anyway, here's what you'll need to make the strawberry crunch cake:

    • ½ cup Unsalted Butter, at room temperature
    • 1 cup Granulated Sugar
    • 2 Egg Whites
    • 1 egg
    • ⅔ cup Milk
    • 3 oz. Package Strawberry Jello
    • 2 ¼ cups All Purpose Flour
    • 1 tsp. Baking Powder
    • ½ tsp. Baking Soda
    • ½ tsp. Salt

    What you'll need for the vanilla frosting:

    • 1 cup Unsalted Butter
    • ¼ cup Heavy Cream
    • 2 tsp. Pure Vanilla Extract
    • ½ tsp. Salt
    • 2 cups Powdered Sugar

    And for the strawberry crunch topping: 

    • 1 cup Dehydrated Strawberries
    • 1 cup Strawberry Cookies
    • 5 Fresh Strawberries

    I know the list looks long at first glance, but I can almost guarantee you have a lot - if not all - of these ingredients on hand already.

    Now, just so you know, the strawberry crunch topping is optional. But, I do think it's what makes this strawberry cake so darn good. You can use dehydrated strawberries, freeze-dried strawberries, or even fresh strawberries for it - although if you use fresh it obviously won't be as crunchy.

    With that said, if you're planning on using fresh strawberries, make sure to grab some extra. You can use them to make this no bake strawberry pie or this McDonald's strawberry banana smoothie. 

    Alright, now that you have your ingredients ready, let's get baking!

    How to Make Strawberry Crunch Cake

    Again, this strawberry crunch cake recipe could not be any easier to make!

    Honestly, don't even have to have any previous cake-baking experience to make it. In fact, the steps are so simple that if you can mix, you can make this strawberry cake recipe. So, get the kids involved with this recipe. They'll be rockstars making this cake recipe.

    Anyway, now let's get baking!

    Step 1: Cream The Butter and Sugar

    To make this strawberry crunch cake, start by preheating the oven to 350°F (180°C) and greasing - or lining a round cake pan - with parchment paper.

    Next, in a large bowl, cream the softened butter with a stand mixer - or handheld electric mixer - until it is light and fluffy.

    Then, add the sugar to the bowl and mix that with the butter until the two ingredients combine.

    Step 2: Make The Cake Batter

    Now that you have a creamy butter and sugar mixture, you're going to add the eggs, milk, and strawberry Jello packet to the bowl. Then, mix everything with the butter and sugar until just combined.

    Now, to finish the cake batter, you'll want to add the flour, baking powder, baking soda, and salt to the bowl. Then, mix all of that together with a wooden spatula - or rubber spatula - until a smooth cake batter forms.

    Step 4: Bake The Cake

    So, once you've got a cake batter consistency going on in the bowl, you'll want to pour it into your prepared cake pan.

    Then, after you've got all of the batter in the pan, you can bake the strawberry cake for about 40 minutes - or until you can insert a toothpick in the center of the cake, and it comes out dry.

    Step 5: Make The Frosting

    While the cake is baking, you can save time by making the frosting.

    To make the frosting, cream together the butter, sugar, salt, and vanilla extract. Then, add the heavy cream and gently mix it to combine with the rest of the ingredients. The frosting should be smooth, light, and airy.

    Step 6: Add the Strawberry Crunch Topping

    Finally, let the cake cool completely after it's baked.

    Then, once cooled, cover it with the frosting and sprinkle the dehydrated strawberries and strawberry cookies to give it the strawberry crunch topping.

    Finish the strawberry cake off with sliced fresh strawberries on top, slice, and enjoy!

    How to Store Strawberry Crunch Cake

    This recipe for strawberry crunch cake will make about 12 slices, depending on how you cut it. So, odds are, if you're serving this at a birthday party, you probably won't have any slices left.

    But, if you just served it for a weeknight dessert, and do have some leftover cake, it stores pretty well. You can store the cake in an airtight container at room temperature for about 4 days or in the fridge for about a week,  

    However, if you want to keep this strawberry cake for even longer, you can freeze it for up to 3 months. Then, whenever you want a slice, just let it thaw at room temperature or in the fridge.

    Strawberry cake:

    ½ cup Unsalted Butter, at room temperature

    1 cup Granulated Sugar

    2 egg whites

    1 egg

    2. In a bowl, cream the butter and sugar with an electric mixer until fluffy.
    3. Add the eggs, milk, and strawberry jello to the bowl and mix until well combined.
    4. Add in the flour, baking powder, baking soda, and salt and combine with a wooden spatula.
    5. Line a cake pan with baking paper (or grease it) and pour the mixture into it.
    6. Bake for 40 minutes, or until a toothpick comes out dry.
    7. To make the frosting, cream together all the ingredients with an electric mixer.
    8. Let the cake cool and cover it with the frosting. Top with dehydrated strawberries, cookies, and fresh strawberries on top.
