Easy Strawberry Crunch Cake Recipe With A Delicious Vanilla Frosting

I've got three words that will change dessert for you forever - Strawberry crunch cake! Seriously, this cake has it all. A lighter-than-air moist strawberry cake combines with sweet and creamy vanilla frosting to make just the most unbelievably delicious cake ever. Strawberry cake:

1/2 cup Unsalted Butter, at room temperature

1 cup Granulated Sugar

2 egg whites

1 egg

2/3 cup Milk

3 oz. Package Strawberry Jello

2 1/4 cups All Purpose Flour

1 tsp. Baking Powder

1/2 tsp. Baking Soda

1/2 tsp. Salt

Vanilla frosting:

1 cup Unsalted Butter

¼ cup Heavy Cream

2 tsp. Pure Vanilla Extract

½ tsp. Salt

2 cups Powdered Sugar

Strawberry crunch topping: 

1 cup Dehydrated Strawberries

1 cup strawberry cookies (or strawberry crunch crumbs)

5 Fresh Strawberries


  1. Preheat the oven to 350°F (180ºC).
  2. In a bowl, cream the butter and sugar with an electric mixer until fluffy.
  3. Add the eggs, milk, and strawberry jello to the bowl and mix until well combined.
  4. Add in the flour, baking powder, baking soda, and salt and combine with a wooden spatula.
  5. Line a cake pan with baking paper (or grease it) and pour the mixture into it.
  6. Bake for 40 minutes, or until a toothpick comes out dry.
  7. To make the frosting, cream together all the ingredients with an electric mixer.
  8. Let the cake cool and cover it with the frosting. Top with dehydrated strawberries, cookies, and fresh strawberries on top.
