Ingredients Substitutions and Suggestions
While I think this sous vide tri tip steak turns out best when made with the ingredients listed above, there's definitely room to switch up some of them to suit your preferences and also possibly save you a trip to the store.
First off, this recipe calls for tri tip, also known as sirloin tri tip roast or triangle tip roast. It's a super flavorful cut of meat that comes from the bottom sirloin. If you can't find tri tip, then you can swap it for any thick cut of sirloin steak or strip steak.
As for the seasoning on the steak, it's kept pretty minimal since it's the sauce that adds most of the flavor. That said, if you want to add more flavor, then you can add extra seasonings. I suggest a little garlic powder or Montreal steak seasoning, or even some fresh rosemary or other herbs.
How To Make Sous Vide Tri Tip
As I mentioned before, making the sous vide steak is about as easy as it gets!
You should only need to be hands-on for about 5 minutes, then the rest of the time is spent letting the steak cook in the sous vide bath. However, the steak will need about 5 hours to cook in the sous vide, so keep that in mind as you plan your day.
Anyway, let's stop wasting time and get cooking!
Step 1: Sous Vide Tri Tip
First, you'll want to season the tri tip with salt and pepper on both sides. Then you can place it in the sous vide bag and remove the excess air using a vacuum sealer.
Once you've prepared the steak, put it in the sous vide runner in a pot or container full of water and set it to cook at 140°F for 5 hours.
Step 2: Sear The Steak
When the 5 hours are up, you can remove the steak from the bag and pat it dry with paper towels. After that, you'll want to heat a non-stick skillet or cast iron skillet to medium-high heat and add 1 tablespoon of olive oil to it.
As soon as the oil is hot, add the trip tip to the skillet and cook it for a minute or so on both sides until browned. Next, you can remove the steak from the skillet and let it rest to help lock in those juices while you make the sauce.
Step 3: Make The Chimichurri
Now onto the chimichurri sauce to add all of that flavor!
To make it, first mix the fresh parsley, fresh dill, dry oregano, red pepper flakes, and red vinegar in a bowl and process them with an immersion blender until creamy. If you don't have an immersion blender, you can also add the ingredients to a blender and pulse a few times until combined.
Step 4: Serve
Last but not least, you can slice the cooked trip tip steak into thin slices. Then you'll want to serve it on a plate with the sauce either drizzled on top or on the side for dipping.
Enjoy!
How To Store Sous Vide Tri Tip
This recipe for sous vide tri tip makes 6 servings, so it should be the perfect amount for a big family dinner. If end up with leftovers, then consider yourself lucky because it tastes delicious the next day.
Speaking of leftovers, you can store the cooked steak in an airtight container, and it'll stay good in the fridge for up to 3-4 days.
Alternatively, if you want your steak to last even longer, you can freeze it wrapped in plastic wrap and kept in a freezer-safe bag or airtight container for up to 3 months.
How To Reheat Tri Tip Steak
When you're ready to enjoy your sous vide tri tip again, you can either eat it cold right out of the fridge, or you can reheat it.
I've found the best way to reheat steak without drying it out is in the oven. So, to reheat your tri tip, just transfer it to a baking dish with a wire rack on top so the steak cooks evenly. Then you'll want to reheat the steak at 300°F for about 10-15 minutes or until it's warmed through.
