The Best Cheesy Potatoes
If you love cheesy potatoes, also known as funeral potatoes, just wait until you try this crockpot cheesy potatoes recipe. This recipe for 'em is so rich, filling, and just jam-packed with flavor.
Honestly, these potatoes always seem to hit the spot when I'm craving a giant bowl of comfort food, and I could seriously eat them every day.
In addition to tasting incredible though, these slow cooker cheesy potatoes are also really easy to make. You basically just combine everything in a bowl and then add it to your slow cooker along with a heavy sprinkle of shredded cheese. Yup, you read that right, the crockpot does all of the hard work, so you only have to be in the kitchen for 10 minutes!
Sounds pretty great, right?!
By the way, while these cheesy potatoes are cooking in the crockpot, you'll have plenty of time to make an equally delicious main course to go with 'em. This lemon chicken recipe and this Southern meatloaf recipe are a couple of my favorite ones to pair with them
Ingredients
Another thing I love about these cheesy potatoes is they require just a handful of simple ingredients. In fact, I'm willing to bet you already have most - if not all - of them at your house already.
Anyway, here's everything you'll need to make these cheesy potatoes:
- 14oz. frozen shredded hash browns, thawed
- 5oz. Can cream of chicken soup
- ½ cup milk
- 1 cup shredded cheddar cheese
- 4oz. Sour cream
- Salt and pepper, to taste
- 2 tsp onion powder (optional)
Pretty simple ingredients, eh?
By the way, you can use almost every single one of these ingredients to make this Cracker Barrel hashbrown casserole or these cheesy mashed potatoes. They're two more of my favorite cheesy potato recipes, so I definitely recommend giving them a shot sometime.
And if you're looking for another crock pot recipe, you can use some of them to make this creamy crock pot chicken casserole or cheesy crock pot mac and cheese.
Potatoes To Use
When it comes to the potatoes, this recipe calls for frozen hash brown potatoes since they have the best texture and are just super convenient as well. But with that said, you could also use frozen diced potatoes - or even fresh potatoes - if you prefer. Just keep in mind that if you use fresh potatoes the recipe will take a little longer to cook.
How To Make Crockpot Cheesy Potatoes
As I mentioned earlier, it couldn't be easier to make these cheesy potatoes in the crock pot. Everything comes together in just one bowl and with only 10 minutes worth of work. So not only is prepping these slow cooker cheesy potatoes a breeze but clean up is too.
Anyway, let's stop wasting time and get cooking!
Step 1: Combine The Ingredients
First things first, you'll want to grease the inside of a crock pot with some oil or non-stick cooking spray. Or you can even use some melted butter if you want.
Then, you'll want to grab a large bowl and mix the milk with the cream of chicken soup and sour cream. If you're using onion powder, then you'll want to add it in at this point as well.
Next, you can season the soup mixture with as much salt and pepper as you want and give everything a mix.
Step 2: Add The Frozen Hash Browns
Once your creamy chicken soup mixture is fully smooth and combined, you can stir in half of the shredded cheddar cheese - or sharp cheddar cheese - and the frozen shredded hash browns or other frozen potatoes.
Then, you can transfer this mixture to your prepared crock pot and top it with the remaining shredded cheese.

Step 3: Cook The Potatoes
Now that everything is good to go, you can cover the slow cooker and cook on low for 4-5 hours or on high for 2-3 hours. You'll know the cheesy potatoes are done when the cheese is nicely melted, and the shredded potatoes are fully cooked.
Anyway, when they're done, you can scoop 'em out and serve warm with anything you want.
Enjoy!
How To Store Crockpot Cheesy Potatoes
This recipe for crockpot cheesy potatoes makes about 6 servings, so it's the perfect side dish recipe for a big family dinner. And, if you're lucky, you may even end up with leftovers!
Speaking of leftovers, you can just store any that you have in an airtight container and keep 'em in the fridge. Stored this way, they should last for up to 3-5 days.
Alternatively, if you want to store your leftover cheesy potatoes for even longer, you can freeze them. Simply transfer the leftovers to an airtight container - or freezer-safe bag - and you can freeze them for up to 12 months.

How To Reheat Crockpot Cheesy Potatoes
When you're ready to enjoy your cheesy crockpot potatoes again, you'll definitely want to reheat them first.
So, to reheat your crockpot cheesy potatoes, you'll just want to transfer them to a baking dish and heat them in the oven at 350°F for about 10 minutes - or until the cheese is melty and fully warmed through.
Alternatively, to warm your cheesy potatoes up even quicker, you can use your microwave. Just heat 'em up in 30-second intervals until they reach your desired temperature.
Wrapping It Up
Well, that's how to make crockpot cheesy potatoes!
