And this Spanish rice recipe has to be the most flavorful rice you can make. It has classic Mexican spices and seasonings that pairs really well with several dishes.

Also, since this Instant Pot Mexican rice takes just 15 minutes to make - and almost all of that is passive cooking time - you'll have plenty of time to whip up one of those meals above to go with it!
And of course, you could just make this rice to eat alone, and it will be delicious

INGREDIENTS
For this Instant Pot Spanish rice recipe, you'll only need a few ingredients that I can almost guarantee you have at home already.

- 1 tbsp. Olive Oil
- ½ cup Onion, chopped
- 1 Garlic Clove, chopped
- 1 tbsp. Sweet Paprika
- ½ cup Tomatoes, chopped
- 1 Bay Leaf
- 1 cup Long Grain White Rice
- 2 cups Vegetable Broth
- Dry Sherry and Fresh Thyme to Serve
Pretty simple stuff, right?
Now, as you can see, this recipe calls for long grain white rice, just like in this yellow rice recipe. But you can really use any rice you want, and it will turn out just as good!

HOW TO MAKE INSTANT POT SPANISH RICE
As I mentioned earlier, this Instant Pot Spanish rice could not be any easier to make.
All you really have to do is add the ingredients to the Instant Pot and then let the pressure cooker do the rest.
So, let's not waste any more time and make some Spanish rice Instant Pot style!
STEP 1: SAUTÉ
The first thing you're going to do is turn the Instant Pot to "Sauté" mode.
And if you haven't already, chop the onion, garlic, and tomatoes.
Then pour the olive oil into the Instant Pot, followed by the onion and garlic, and sauté for around 5 minutes until they are fragrant.

STEP 2: COOK
Now that those ingredients are sautéd add the paprika, tomatoes, salt, pepper, rice, vegetable broth, and bay leaf.
Then set the Instant Pot to high pressure and cook for 7 minutes.
After the time is up, release the steam by turning the knob with an oven mitt from the sealed to the venting position.
And once the valve drops, transfer your Spanish rice to a plate and serve with dry sherry and fresh thyme. Enjoy!

STORING INSTANT POT RICE
This recipe will make about 2 servings of Spanish rice. So if you are serving it for a family dinner, you might want to double or triple the recipe.
Then if you have any leftovers, you can store the rice in an airtight container in the fridge for up to 5 days.
And if you want to keep it for longer, you can store it in a freezer-safe bag for up to 3 months! When you are ready to eat it, just thaw the rice in the fridge overnight.
For the best way to reheat your Mexican rice, put it in a pan on the stovetop for a few minutes until warm.
And to reheat the rice quickly, put it in the microwave for a few seconds.
