Instant Pot Spanish Rice In Only 15 Minutes

This instant pot Spanish rice is full of flavor and cooks to perfection in just 15 minutes! It seriously comes out tasting like it's from an authentic Mexican restaurant. And it goes so well with a variety of dishes and makes for one quick, easy, and delicious side. 



1 tbsp. Olive Oil

½ cup Onion, chopped

1 Garlic Clove, chopped

1 tbsp. Sweet Paprika

½ cup Tomatoes, chopped

1 Bay Leaf

1 cup Long Grain White Rice

2 cups Vegetable Broth

Dry Sherry and Fresh Thyme to Serve


  1. Turn on the instant pot in “Sauté” mode.
  2. Heat the olive oil and sauté the onion and garlic clove until fragrant (around 5 minutes).
  3. Add the sweet paprika, tomatoes, salt, and pepper. 
  4. Add the rice, vegetable broth, and bay leaf.
  5. Close the lid and cook at high pressure for 7 minutes. Release the steam and transfer to a serving plate. Serve with dry sherry and fresh thyme.
