    This chicken meatloaf is full of flavor with the perfect blend of seasonings and sweet ketchup glaze on top. And if you prefer chicken over ground beef, this is a great alternative for traditional meatloaf that is just as comforting, satisfying, and delicious. Plus, it is so simple to make - just 5 minutes is all it takes to prepare, and the rest is cook time.

    THE BEST CHICKEN MEATLOAF 

    If you've never heard of ground chicken meatloaf before, it is essentially the same thing as classic meatloaf but with chicken instead of ground beef. 

    It is a leaner way to enjoy a comforting and savory meal that is delicious any time of year. 

    And this chicken meatloaf recipe is a step above any meatloaf you may have had in the past. 

     

    The ground chicken is full of complimenting flavors - and there are even a few "secret" ingredients that make it even more delicious. And the ketchup glaze on top adds a little sweetness to the savory meat, balancing out the dish perfectly.

    Also, while the meatloaf is baking in the oven, it gives you time to prepare any sides you want, like these red skin mashed potatoes, this asparagus casserole, or even this cheesy spinach casserole.

    By the way, this recipe makes about 10 servings, so it's one of the best easy family dinner recipes you can make.

    And the leftovers are great, too, so don't be afraid to make this chicken meatloaf for your weekly meal prep.

    INGREDIENTS 

    So, to make this chicken meatloaf, you'll need just a few simple ingredients. 

    And you might have the majority of them at home already, but if not, you should easily be able to find them at your local grocery store!

    Here is everything you'll need:

    • 1lb. Ground Chicken
    • 1 cup Breadcrumbs
    • 2 Eggs
    • Just over ½ cup Milk
    • 1 Medium Onion, Chopped
    • 3 Cloves of Garlic, Minced
    • ½ cup Grated Parmesan
    • 2 Tbsp Worcestershire Sauce
    • Chopped Parsley
    • Sage
    • Salt and Pepper

    And for the glaze:

    • 3 Tbsp Ketchup
    • 3 Tbsp Tomato Puree 
    • 1 Tsp Brown Sugar

    So, as I mentioned earlier, the only real difference between this recipe and traditional meatloaf is we will be using ground chicken. 

    And I like to add some grated parmesan cheese for a subtle cheesy flavor that mixes so well with the savory seasonings.

    HOW TO MAKE GROUND CHICKEN

    As you know, we will be using ground chicken to create the meatloaf. 

    And, although ground chicken should be easy to find at your local grocery store, you can make your own using chicken breasts if you have a food processor. 

    Just cut up a pound of chicken breasts into large chunks and add them to the food processor. 

    Then pulse the chicken until it turns into a ground chicken consistency - it's a simple as that. 

    CUTTING DOWN ON THE SUGAR

    If you follow a low carb lifestyle and want to take the sugar out of this recipe, all you have to do is substitute a few ingredients. 

    For the meatloaf mixture, use unsweetened almond milk instead of milk.

    And for the glaze, use a sugar free ketchup instead of regular ketchup and Brown Swerve instead of brown sugar. 

    These simple substitutions will take most of the added sugar out of this recipe, and make it a pretty darn healthy meatloaf.

    Also, you can make your own breadcrumbs with some low calorie bread, and bring the calories down even lower in the recipe. Obviously, this takes an extra step, but if you're trying to make a healthy meatloaf it's definitely worth it.

    MAKING GLUTEN FREE MEATLOAF

    If you've been looking for gluten free dinner recipes, you can easily adjust the ingredients in this recipe to make a gluten free meatloaf.

    In fact, the only ingredient you'll need to substitute is the breadcrumbs!

    Just use any gluten free breadcrumbs of your choice in place of regular breadcrumbs, and this meatloaf will be gluten free and just as delicious.

    HOW TO MAKE CHICKEN MEATLOAF

    Ok, so as I've mentioned before, this recipe is effortless to make and only takes about 5 minutes to prepare - then you just have to wait for it to cook in the oven. In fact, if you have kids at home, and want to include them in making dinner, this easy meatloaf recipe would be a great one to make with them.

    Anyway, if you're ready to make this ground chicken meatloaf, let's get cooking!

    STEP 1: PREPARING THE MEATLOAF 

    First, preheat the oven to 365 degrees Fahrenheit (185°C).

    While the oven is warming up, take out a large bowl and add the ground chicken, eggs, bread crumbs, onion, garlic, parmesan, Worcestershire sauce, salt, and pepper.

    Then using your hands, combine the ingredients together until everything is well incorporated.

    Next, slowly add the milk into the mixture until it is kind of thick, but you do not want it to be a liquid. 

    Lastly, add the finely chopped sage and parsley to the meatloaf, and again, mix everything well with your hands until the seasonings are well incorporated.

    STEP 2: COOKING THE MEATLOAF

    By now, the oven should be preheated and ready to go. 

    First, take out a narrow baking pan and coat it with baking spray.

    Then evenly pour your meatloaf mixture into the pan and flatten the top of it with a spoon. 

    Place the meatloaf in the oven and bake for about 80 minutes, until the meatloaf internal temp reaches 165°F (74°C).

    While the meatloaf is baking, you can make the glaze to finish it off.

    STEP 3: MAKING THE GLAZE

    First, mix the ketchup, tomato puree, and brown sugar in a small bowl until they are fully combined. 

    Once the meatloaf is almost done baking, you can pour the tomato glaze evenly over the top of it, then stick it back in the oven to finish baking.

    STEP 4: SERVING

    When your chicken meatloaf is done, take it out of the oven and let it cool before cutting. 

    Then once it is cooled, cut it into 10 slices - or however many you want - serve with any sides of your choice, and enjoy!

    How To Store Chicken Meatloaf

    Since this recipe makes so many servings, it is ideal for a family dinner or if you want to cook once and have some leftovers to enjoy throughout the week. 

    You can store your leftovers in an airtight container in the refrigerator for up to 4 days.

    And to reheat your meatloaf, put it in a baking dish and add 1 tablespoon of water or broth to it. 

    Then cover the baking dish with aluminum foil and heat in the oven at 250°F (121°C) for 25-30 minutes, or until the meatloaf reaches your desired temperature.

    WRAPPING IT ALL UP 

    There you have it, a delicious, comforting, and flavorful healthy chicken meatloaf recipe that makes an excellent dinner any time of year.

    1 cup (125g) Breadcrumbs

    2 Eggs

    Just over ½ cup (160g) Milk

    1 Medium Onion, Chopped

    3 Cloves of Garlic, Minced

    ½ cup (50g) Grated Parmesan

    2 Tbsp Worcestershire Sauce

    Chopped Parsley

    Sage

    Salt and Pepper

    Glaze:

    3 Tbsp (44g) Ketchup

    3 Tbsp Tomato Puree 

    1 Tsp Brown Sugar

    Instructions

    1. Preheat the oven to 365°F (185°C).
    2. In a large bowl, add the ground chicken, eggs, bread crumbs, onion, garlic, parmesan, Worcestershire sauce, salt and pepper.
    3. Combine the mixture with your hands until everything is incorporated.
    4. Then add the milk slowly until the mixture is kind of thick, but not a liquid. 
    5. Add finely chopped sage and parsley and mix with your hands again.
    6. Grease a narrow baking pan with baking spray and pour in the meatloaf mixture. Flatten the surface with a spoon.
    7. Bake for about 80 minutes, until internal temp reaches 165°F (74°C).
    8. While the meatloaf is baking, prepare the ketchup glaze - mix ketchup, tomato puree, and brown sugar in a small bowl until combined.
    9. Towards the end of baking, pour the tomato glaze over the meatloaf.
    10. Let the meatloaf cool, then cut it into slices and enjoy.
