    Hamburger vegetable soup was always one of my favorite childhood meals, and every time I cook it, those memories come flooding back.

    The mix of ground beef, potatoes, veggies, and a warm cheesy tomato soup is just a match made in culinary heaven. I mean, what's not to love about this delicious soup?

    Plus, easy recipes are always the best recipes, and this hamburger vegetable soup recipe is as simple as can be. It requires only a few easy steps, and you can cook the entire soup in just one pot or dutch oven, which saves time when cleaning up.

    Oh, and since most of the time in this recipe is just letting the soup cook, you can make a delicious side to go with it, like this Little Caesars crazy bread or this garlic bread for a crusty bread option. Both bread options are delicious when dipped in the soup for a complete meal.

    Ingredients

    Another reason I love this easy hamburger soup is that it only requires a few basic ingredients. And I can almost guarantee that you'll have most - if not all - of them at your house already since they're all kitchen/pantry staples.

    Anyway, here's what you'll need for this easy soup recipe:

    • 1 tbsp. olive oil
    • 1 pound ground beef
    • 2 tsp. Worcestershire Sauce
    • 1 onion, diced
    • 1 garlic clove, minced
    • Any additional veggies you want (fresh or frozen)
    • 2 Russet potatoes, peeled and diced 
    • 4 cups beef broth
    • 14 oz. diced or crushed tomatoes
    • ¼ cup cheddar cheese, shredded
    • Fresh Cilantro and Parsley
    • Salt and black pepper

    Really straightforward, right?

    By the way, if you have any remaining ingredients, you can use most of them to make this amazing meatball soup next! Or, for something a little different, you can make these baked beans with ground beef or this beef stew.

    Ingredients Substitutions and Suggestions

    While I recommend making this ground beef veggie soup with the ingredients listed above, there are a few different additions and substitutions you can make to mix things up. With that said, I'll go over a few below.

    Add tomato paste for a more intense flavor

    This recipe uses diced tomatoes, but you can also add tomato paste and even condensed tomato soup to really intensify the flavor. If you're using tomato soup, just reduce the amount of beef broth by about a cup.

    Add extra herbs

    Fresh herbs can really lift a soup to another level, and there are loads of different herbs you can add to bring new flavor dimensions. Bay leaf and Italian seasoning can help to give your soup a real rustic Italian vibe. Just remember to take the bay leaves out before you serve.

    Add extra fresh or frozen vegetables 

    You can add fresh vegetables like celery, broccoli, carrots, green beans, chopped celery, lima beans, or even frozen veggies. While I always prefer to use fresh veggies whenever possible, there are loads of combinations of frozen mixed vegetables, so they are great for experimenting with different flavors. Adding veggies will make this more of an old fashioned vegetable soup, so feel free to add as many as you want.

    Add a little spice

    If you like your beef soup to have a bit of a kick, try adding red pepper flakes or chili powder to really bring the heat! Or you can serve the soup with a bottle of hot sauce and add as much as you want.

    This is a really simple shortcut, as garlic powder and onion powder will give you a really intense flavor with less cooking.

    How to Make Ground Beef Vegetable Soup

    As I said before, making this soup is so simple. I mean, how can you beat a beef and vegetable soup recipe that comes together in just 30 minutes?

    And most of that time is passive cooking, so you can just sit back and relax while the delicious smell of the soup fills up the kitchen.

    So with that said, let's not waste any more time and get cooking!

    STEP 1: Cook the ground beef

    So, the first thing you'll need to do is cook the ground beef.

    To start, heat a heavy soup pot, dutch oven, or stock pot over medium-high heat. Then add olive oil to it, and once it's hot, add ground beef and cook until it’s browned on all sides. You'll want to make sure you break the beef apart while cooking, so it browns evenly.

    Next, you can add the Worcestershire sauce to the pot and give it a mix, so it coats the beef. Worcestershire sauce is a great addition to beef recipes because it has such an intense, deep flavor that brings another element to this soup.

    Step 2: Cook the onions and garlic

    Now that the beef is cooked reduce the heat to medium and add the diced onion and garlic to the pot. Cook for a couple more minutes, stirring occasionally, until the onions start to turn translucent. It's really important you don't burn the garlic, so turn the heat down if it gets too hot.

    Step 3: Add the rest of the soup ingredients

    Once your onion and garlic are cooked, you can add the russet potatoes, beef broth, diced tomatoes, and any additional veggies you want to the pot and season everything with salt and pepper.

    Then you'll want to mix everything together, so all of the ingredients combine.

    Step 4: Simmer The Soup

    Now it's time to let the soup cook so all of the flavors can fuse together. So first, bring the soup to a boil, and then lower the heat and let it simmer for about 20 minutes. If the soup reduces too much, add a little more broth or some water to it.

    Finally, once the vegetable beef soup is cooked, serve it with shredded cheddar cheese on top, along with fresh parsley and cilantro. Enjoy!

    How to Store Ground Beef Vegetable Soup

    This recipe for hamburger soup makes about 4 servings, so it'll be just the right amount for a family dinner or to save for lunch for the week.

    If you happen to have any leftovers, you can store the cooled soup in an airtight container in the refrigerator for up to 4 days.

    And if you want to keep your soup for longer, you can freeze it for up to 3 months. To freeze your leftover soup, allow it to cool and then put it in a freezer-safe container or freezer-safe bag.

    How to Reheat Ground Beef Veggie Soup

    Once you're ready to enjoy this hamburger soup again, it's definitely best warmed up.

    To reheat your soup, simply transfer it back into a pot and bring it to a low boil, stirring occasionally so it reheats evenly.

    Alternatively, you can microwave it in 1-minute intervals, stirring between each one. Just make sure you use a microwavable bowl if your airtight container or freezer-safe container cannot go in the microwave.

    I am a huge fan of green beans, so if you are going to add extra veggies, look out for mixed vegetables that include frozen green beans. Or you can just add green beans for more of a green bean soup.

    Any fresh crusty bread or this air fryer garlic bread are both perfect accompaniments to this amazing soup. I love dipping bread in this soup, so I definitely recommend eating it with some bread on the side.

    Can I Switch the ground beef for ground turkey?

    Yes, you can. Ground turkey is leaner than ground beef, so switching meat can give you a healthy soup that will still taste absolutely delicious! You can also use extra lean ground beef too for another option.

    1 pound ground beef

    6. Bring to a boil, then lower the heat and simmer for 20 minutes.
    7. Serve with cheddar cheese and fresh parsley, and cilantro on top.
