In our house, we truly think this is the best potato soup recipe. Not only is it delicious, but - as I already mentioned - it uses just four ingredients and is ridiculously simple to make. Plus, all you need from an equipment standpoint is a single pot - yup, that's it!
So, let's not waste any more time, let's get into the recipe!
Step 1: Prepping The Soup
To start, pull out a big pot and put it over medium-high heat. Then, add a tablespoon of butter and the diced onions to it.
Cook the butter and onions for a few minutes until the onions are golden.
While that's cooking, wash, peel, and chop the potatoes. Then, add them to the pot with some water and cook for about 15 minutes or until the potatoes are soft and fork-tender.
Step 2: Blending The Soup
Now, return the diced and cooked onions to the pot, adding the rest of the butter, salt, and pepper.
Then, use an immersion blender - or transfer everything to a regular blender - and blend everything until smooth or until it reaches the consistency of preference. If you want chunky potato soup, just pulse the mixture a few times.

Once the soup is blended, add it evenly to four bowls.

Instructions
