The BEST Ground Beef Vegetable Soup Made In 30 Minutes

This ground beef vegetable soup is an amazing one-pot meal that is sure to warm you up on chilly days. It combines ground beef, potatoes, veggies, and a rich tomato broth for a hearty soup that the whole family will love. Not only that, this hamburger soup can be prepped and cooked in just 30 minutes, making it a great recipe when you want something quick and delicious!

Ingredients

1 tbsp. olive oil

1 pound ground beef

2 tsp. Worcestershire Sauce

1 onion, diced

1 garlic clove, minced

Any additional veggies you want (fresh or frozen)

2 Russet potatoes, peeled and diced 

4 cups beef broth

14 oz. diced or crushed tomatoes

1/4 cup cheddar cheese, shredded

Fresh Cilantro and Parsley

Salt and black pepper

Instructions

  1. Heat a heavy bottom pan to medium-high heat.
  2. Add olive oil, and once it's hot, add the beef and cook until it’s browned on all sides. 
  3. Add the Worcestershire sauce and mix to combine with the beef.
  4. Add the onion and garlic and cook for a couple more minutes until the onions start to get translucent. 
  5. Add the russet potatoes, beef broth, crushed tomatoes, and any additional veggies you want, and season with salt and pepper. Mix everything together.
  6. Bring to a boil, then lower the heat and simmer for 20 minutes.
  7. Serve with cheddar cheese and fresh parsley, and cilantro on top.
