As I just mentioned, you can actually use any type of cake mix that you want to make these cake mix cookies.
But I highly suggest you use either the white, yellow, or strawberry Funfetti cake mixes from Pillsbury. All of them will give you that iconic Funetti cake look to the cookie.
Oh, and Pillsbury actually has a Funfetti Oreo cake mix if you like cookies and cream or want chocolatey cookies.
Now, if you use any of the Funfetti cake mixes, you really don't have to use any rainbow sprinkles - also known as rainbow jimmies - since they are already in the cake mixes.
But if you can't find the Funfetti cake mix and are just using a regular white or yellow cake mix, you can achieve the same birthday cake mix effect by adding rainbow sprinkles to the dough.
By the way, if you want to take any of these chewy Funfetti cookies to another level and give them true cake vibes, you can spread some frosting on top of each Funfetti cookie and finish it off with sprinkles!
How to make Funfetti Cookies
As I mentioned a few times, these Funfetti cookies are pretty simple to make. They only take 20 minutes - including baking time - and the batter doesn’t need any refrigeration.
And this recipe will make about 12 Funfetti cookies, so if you need more, simply double or triple the recipe!
Now, let's not waste any more time and make soft and chewy Funfetti cookies!
Step 1: Prep Work
First things first, preheat the oven to 350°F (180°C), so it's prepared to bake the cookies once they're ready.
Then line a baking sheet with parchment paper and set it aside for later.
Step 2: Making the Cookie Dough
This is a pretty simple step, but it demands a bit of attention. The first thing you need to do to make the cookie dough is to add the cake mix, eggs, and oil or butter to a large mixing bowl. And make sure you use the biggest mixing bowl that you have or the ingredients will dump out of the bowl while you're mixing.
Then give everything a good mix just until it combines and a dough forms. It will take a little bit of mixing to do this, so don't think that it won't work if everything doesn't combine only after a few mixes.
Step 3: Adding The Extras
Now, add white chocolate chips or chunks broken into pieces to the bowl and fold them into the dough.
And if you are not using the Funfetti cake mix, you can add the colored sprinkles to the dough and fold the colored sprinkles into the dough so they're well incorporated.
Oh, and make sure that you save some of the rainbow sprinkles for the top of the cookies.
Step 4: Scooping the Dough
As I mentioned, this recipe will make 12 large Funfetti sugar cookies, so you'll need to cook them in two batches.
To start, use a cookie scooper to scoop dough or form about 1 ½-2 tablespoon-sized dough balls. Then put 6 of the cookie dough balls on a baking sheet lined with parchment paper. Make sure you leave a little bit of space between each cookie because they will spread quite a bit while they bake.
Next, grab some more colored sprinkles and top the cookies with them. And if you want, you can stick some more white chocolate on top too.
Step 5: Baking The Cookies
Now bake the first batch of Funfetti cookies for about 10-12 minutes.
And while they are baking, you can scoop the remaining dough onto a second baking sheet lined with parchment paper, so they're ready to bake once the first batch is done.
Once the cookies are baked, let them cool completely, or enjoy them hot out of the oven!
