    THE BEST FUNFETTI COOKIES

    The Funfetti cookies are as fun as a cookie recipe gets. It's quick, easy, and oh so delicious.

    And these birthday cake cookies are literally a cake in soft and chewy cookie form. Seriously, it's like you're eating two of the best desserts at the same time, a cake and a cookie. It doesn't get much better than that, right?

    These 20-minute Funfetti cookies are excellent for any kid’s birthday party or to serve as a sweet treat after dinner.

    The simple ingredients and cooking steps make for the perfect recipe if you’re in a rush or just feel like whipping up a simple dessert that looks like it took an extravagant baking process.

    I like to serve these chewy sugar cookies from cake mix alongside this s'more dip - especially at a birthday party or family get-together. The combination gives you two show-stoppingly delicious desserts that take under 30 minutes total to make both!

    Ingredients

    This Funfetti cookie recipe is made out of 4 simple ingredients, which you can find anywhere.

    In fact, you probably already have all of them at home - well, maybe, except for the cake mix.

    Anyways, here's everything you need to make Funfetti cookies:

    • 1 package of birthday cake mix
    • 1 cup white chocolate or white chocolate chips
    • ⅓ cup oil or salted butter, melted
    • 2 eggs
    • Rainbow sprinkles (or any colored sprinkles)

    Pretty simple, right?

    And if you don't want to use that much oil, as you can see, you can substitute it with some melted butter instead! These Funfetti cookies taste delicious either way.

    Oh, and if you run to the store, pick up another pack of cake mix - you can use it to make this Funfetti dip next!

    Now, to make these Funfetti sugar cookies, you can actually use any flavor of cake mix that you want. So let's go over some different options that you have.

    CAKE MIXES TO USE TO MAKE THESE COOKIES

    As I just mentioned, you can actually use any type of cake mix that you want to make these cake mix cookies.

    But I highly suggest you use either the white, yellow, or strawberry Funfetti cake mixes from Pillsbury. All of them will give you that iconic Funetti cake look to the cookie.

    Oh, and Pillsbury actually has a Funfetti Oreo cake mix if you like cookies and cream or want chocolatey cookies.

    Now, if you use any of the Funfetti cake mixes, you really don't have to use any rainbow sprinkles - also known as rainbow jimmies - since they are already in the cake mixes.

    But if you can't find the Funfetti cake mix and are just using a regular white or yellow cake mix, you can achieve the same birthday cake mix effect by adding rainbow sprinkles to the dough. 

    By the way, if you want to take any of these chewy Funfetti cookies to another level and give them true cake vibes, you can spread some frosting on top of each Funfetti cookie and finish it off with sprinkles!

    How to make Funfetti Cookies

    As I mentioned a few times, these Funfetti cookies are pretty simple to make. They only take 20 minutes - including baking time - and the batter doesn’t need any refrigeration.

    And this recipe will make about 12 Funfetti cookies, so if you need more, simply double or triple the recipe!

    Now, let's not waste any more time and make soft and chewy Funfetti cookies!

    Step 1: Prep Work

    First things first, preheat the oven to 350°F (180°C), so it's prepared to bake the cookies once they're ready.

    Then line a baking sheet with parchment paper and set it aside for later.

    Step 2: Making the Cookie Dough

    This is a pretty simple step, but it demands a bit of attention. The first thing you need to do to make the cookie dough is to add the cake mix, eggs, and oil or butter to a large mixing bowl. And make sure you use the biggest mixing bowl that you have or the ingredients will dump out of the bowl while you're mixing.

    Then give everything a good mix just until it combines and a dough forms. It will take a little bit of mixing to do this, so don't think that it won't work if everything doesn't combine only after a few mixes.

    Step 3: Adding The Extras

    Now, add white chocolate chips or chunks broken into pieces to the bowl and fold them into the dough. 

    And if you are not using the Funfetti cake mix, you can add the colored sprinkles to the dough and fold the colored sprinkles into the dough so they're well incorporated. 

    Oh, and make sure that you save some of the rainbow sprinkles for the top of the cookies.

    Step 4: Scooping the Dough

    As I mentioned, this recipe will make 12 large Funfetti sugar cookies, so you'll need to cook them in two batches.

    To start, use a cookie scooper to scoop dough or form about 1 ½-2 tablespoon-sized dough balls. Then put 6 of the cookie dough balls on a baking sheet lined with parchment paper. Make sure you leave a little bit of space between each cookie because they will spread quite a bit while they bake. 

    Next, grab some more colored sprinkles and top the cookies with them. And if you want, you can stick some more white chocolate on top too.

    Step 5: Baking The Cookies

    Now bake the first batch of Funfetti cookies for about 10-12 minutes.

    And while they are baking, you can scoop the remaining dough onto a second baking sheet lined with parchment paper, so they're ready to bake once the first batch is done.

    Once the cookies are baked, let them cool completely, or enjoy them hot out of the oven!

    And if you're adding frosting to them for a true cake cookie, let them cool completely and then frost the tops of the cookies and add sprinkles on top. Enjoy!

    How to Store Funfetti Cookies

    As you know, this recipe for Funfetti cookies makes 12 large soft and chewy cookies. And if you're serving them at a party, there's a slim chance you'll have any left. But if you're just making them for yourself or your family, you might have a few leftovers!

    And if you have any Funfetti sugar cookies left, you can store cookies in an airtight container or a Ziploc bag on your kitchen counter for up to 5 days. Just make sure the cookies have cooled completely before storing.

    Oh, and if you want to keep them for longer, you can freeze Funetti cookies in an airtight container or freezer-safe bag for about 8 months. Then whenever you want one, either enjoy it frozen, let it thaw, or heat it in the microwave!

    How To store Uncooked Cookie Dough

    I love freshly baked cookies, so whenever I make them, I like to cook half of the dough and then save the rest for when I'm done with the first batch.

    There's just nothing like cookies hot and fresh out of the oven, so why not recreate that experience as much as possible!

    If you want to save the cookie dough to bake another time, you can store it in a few different ways in the freezer for up to 3 months. 

    And the best part is you can put the frozen cookie dough right into the oven and don't have to wait for it to thaw! So doing this makes for the ultimate quick and easy dessert that everyone is sure to love.

    There you have it! That is how to make Funfetti cookies that are just so much better than cake. Well, at least I think so since soft and chewy cookies are by far my favorite dessert.

    1. Preheat the oven to 350°F (180°C). Line a baking sheet with parchment paper.
    2. Combine the cake mix, oil, and eggs in a large bowl until cookie dough forms.
    3. Add the white chocolate and rainbow sprinkles and fold them into the dough.
    4. Use a cookie scoop to scoop out 6 dough balls and add them to the baking sheet lined with parchment paper. Add some more rainbow sprinkles on top.
    5. Bake for about 10-12 minutes. Repeat the process with the remaining cookie dough.
