    Churro Pancakes From Scratch In 10 Minutes

    These churro pancakes have everything you'd want in a pancake recipe plus so much more. They are thick, soft, fluffy, and filled with brown sugar cinnamon flavor. Trust me, once you get a taste, you'll never want to eat regular pancakes again!

    THE BEST CHURRO PANCAKES 

    There are good pancakes, there are really good pancakes, and then there are these cinnamon sugar pancakes. 

    So, think about the best pancakes you've ever had, and then think about a delicious churro - now combine the two - that's what you get in this churro pancake recipe. 

     

    These pancakes are crazy thick and perfectly soft, topped off with cinnamon sugar that melts on the top of each pancake and in your mouth.

    And I have a few secret touches that make these pancakes explode with cinnamon brown sugar flavor.

    Now, I might be biased, but I think these taste so much better than the churro pancakes from IHOP. Not to mention, they are beyond easy to make, take just 10 minutes, and turn out perfect every time.

    And don't be surprised if you serve these to your friends and family and they beg you for the recipe. But these cinnamon sugar pancakes are easily one of the best breakfast recipes out there, so they deserve to be shared!

    INGREDIENTS

    Something else I think you'll love about this recipe is that you probably have every ingredient you need in your kitchen. 

    Here is what you'll need for the pancake batter:

    • ½ cup yogurt
    • ½ cup milk
    • 1 egg
    • ¾ cup flour
    • 2 tbsp brown sugar
    • ½ tsp cinnamon
    • 1 tsp baking powder

    And for the topping: 

    • 3 tbsp sugar
    • 1 tbsp cinnamon
    A small bowl of cinnamon sugar, a small bowl of milk next to it, a whisk and egg in front of it, a medium bowl of flour next to the egg, in front of that a medium bowl of yogurt, and to the left a small bowl of cinnamon, a small bowl baking powder, and a small bowl of brown sugar. Everything is sitting on a white counter.

    See, all super common ingredients! 

    But if you don't have them on hand, definitely pick them up because you'll need to use every ingredient to make the best homemade pancakes ever. 

    And you can use most of these ingredients to make this Air Fryer French Toast to create the ultimate breakfast!

    HOW TO MAKE CHURRO PANCAKES

    I know you're probably dying to eat these pancakes, so let's get to the good stuff. 

    Get out all of your ingredients and a large pan. Or, if you want to cook all your pancakes at once, you can take out a griddle if you have one. 

    And this recipe will make 4 large pancakes, so if you want more to treat your entire family to this deliciousness, just double or triple the recipe! 

    Now let's make some pancakes!

    Step 1: Making The Batter

    First, put your 3 tablespoons of sugar and 1 tablespoon of cinnamon in a small bowl, mix them to combine, and then set aside for later.  

    Now get out a large bowl and add in your dry ingredients. That will be your flour, brown sugar, cinnamon, and baking powder. Then, you can give everything a good whisk until combined. 

    Next, make a well in the center of your dry ingredient mixture. Then add your egg, milk, and yogurt to the well and whisk everything until just combined.

    A pro tip here is only to whisk until a batter just forms - you do not want to keep mixing after this happens.

    Step 2: Cooking The Pancakes

    Now either put a large pan over medium-high heat or turn your skillet to medium-high heat. Then melt about 1 tablespoon of butter or enough to cover your cooking surface.

    Next, spoon about ¼ cup of batter onto your surface to make one pancake. 

    You will want to cook your pancake until bubbles first start to appear on the surface, then flip your pancake over and cook for 1 more minute.

    Then once your pancake is cooked, remove it from your pan and immediately sprinkle the top with your cinnamon-sugar mixture. And after you cook each pancake, stack it on top of the other ones to melt the cinnamon sugar. 

    Finally, dig in and enjoy!

    How To Store Pancakes

    Although these pancakes taste incredible hot off the pan, they are pretty darn good leftover too. 

    If you happen to have pancakes that didn't get eaten - which is a very slim chance - you can store them in an airtight container in the fridge for up to 3 days. 

    Then just pop them in the microwave for a few seconds to warm them up. 

    Or my favorite way to store them - you can freeze your pancakes for up to 3 months. Just put your cooled pancakes on a baking sheet lined with parchment paper in the freezer until they're frozen, then transfer to a freezer-safe bag. 

    Then to reheat your frozen pancakes, you can either put them in the toaster oven or in the microwave.

    These pancakes are not low carb, but to make them low carb, all you have to do is follow how to make them sugar-free below and use almond flour in place of regular flour.

    HOW TO MAKE THESE PANCAKES SUGAR FREE?

    If you're looking for a way to make this recipe a little healthier, you can turn these into sugar-free pancakes.

    Just substitute the brown sugar for either Brown Swerve or Lakanto's Golden Monkfruit Sweetener. Then substitute the sugar for Granular Swerve or Lakanto's Monkfruit Sweetener.

    HOW TO MAKE THESE PANCAKES GLUTEN FREE? 

    If you want to turn these into gluten-free pancakes, you can swap out the flour for gluten-free flour or almond flour.

    HOW TO MAKE MORE PANCAKES?

    Ingredients

    Scale

    Pancake batter:

    ½ cup yogurt

    ½ cup milk

    1 egg

    ¾ cup flour

    Topping:

    1. Whisk dry ingredients in a bowl.
    2. Make a well in the center and add egg, milk, and yogurt. Whisk just until combined.
    3. Heat a skillet over medium-high heat. Melt 1 tbsp butter on the surface, spoon about ¼ cup of batter for one pancake.
    4. When bubbles start to appear on the top of the pancake, turn over. Cook for 1 more minute.
    5. Sprinkle with cinnamon sugar right after you remove them from the pan.
