Seriously, from the salty-sweet flavor of the breakfast sausages to the rich, creamy mixture of eggs and melty cheese, this casserole is perfect from the first bite to the last.
In addition to tasting delicious though, this breakfast casserole recipe also happens to be really easy to put together. In fact, 10 minutes of prep work is all that's required. And as far as the process goes, just 3 simple to follow steps are all you'll have to follow to make it.
Yup, it's that easy!
Oh, and did I mention this is the perfect make-ahead breakfast? Because it is!
That means you can build the casserole on Christmas eve, and then wake up on Christmas morning and pop it in the oven, and enjoy! You'll even have time to make this gingerbread latte or peppermint mocha frappuccino while it bakes. Talk about a Christmas miracle!

For instance, when it comes to sausages, I used breakfast pork sausages to make this casserole, but any breakfast sausage will work just fine!
You can also use any kind of shredded cheese that you want, I just think cheddar tastes the best.
As for the bread, I usually just use whatever day-old bread I have lying around. But, having said that, white bread, Texas toast, or even french toast are all really tasty options I've had good success with in the past. In fact, I've even swapped bread altogether for cooked sweet potatoes, and I have to say, it turned out pretty good!
Lastly, for optional add-ons, I usually keep it simple and set out a bottle of hot sauce or ketchup for my eaters. But some other great add-ons are sour cream or even this McDonald's breakfast sauce!
How To Make Christmas Breakfast Casserole
Now it's time for the fun part, making the casserole!
As I mentioned earlier, this recipe is one of the easiest Christmas breakfast casseroles you'll ever put together. You basically just cook the sausages, then add them to the casserole dish with the rest of the ingredients, and bake it all together until it's golden brown and ready to go.
Anyway, let's stop wasting time and get cooking!
Step 1: Cook The Sausage
First, begin by greasing a 9x13-inch baking dish and preheating the oven to 350°F (180ºC).
Then, grab a large nonstick skillet and cook the sausages for a couple of minutes, breaking them up as they cook until the sausage is browned on all sides.
Step 2: Build The Casserole
Now that that sausage is good to go, it's time to bring in the rest of the ingredients. So, to do that, you'll want to take out a large bowl and add the eggs, half and half, and a little salt and pepper to it and whisk everything to combine. Then, you can add the cooked sausages, bread pieces, and half of your shredded cheddar cheese to the bowl and mix everything together with a spatula.
Once the bread is coated in the egg mixture, you can transfer all of the casserole ingredients to a prepared baking dish and top it with the rest of the shredded cheese.

So, now that this delicious casserole is assembled, you can put it in the oven and bake it for about 30 minutes or until the cheese is bubbly and lightly golden brown.

If you want to make this casserole on Christmas eve, just cook the sausage and assemble the casserole as I described above. Then, you can cover it with tin foil, store it in the fridge, and bake it on Christmas morning.
You can also cook the sausage and assemble the casserole early in the morning and bake the casserole whenever you're ready to have breakfast or brunch!
How To Store Christmas Breakfast Casserole
This Christmas breakfast casserole recipe will make 4 hearty servings so it's perfect for a big family breakfast. If you're lucky you might even end up with some leftovers.
Speaking of leftovers, you can store the leftover casserole in an airtight container, or put a lid on the casserole dish. Stored this way, it'll last in the fridge for 3-4 days.
Alternatively, if you want your leftovers to last even longer, you can store them in an airtight container and keep them in the freezer for up to 2 months.
How To Reheat Christmas Breakfast Casserole
Now, even though this casserole tastes best the day that you make it, it's also pretty darn delicious when it's reheated.
That said, the best way to reheat your leftover casserole is to put it back in the casserole dish and bake at 300°F for about 10-12 minutes, or until it's fully warmed through.
By the way, I don't recommend microwaving the casserole to warm it up. I find that it makes the eggs rubbery.

This is a great recipe. There is an option to use chopped bacon instead. I have seen whole bacon strips cooked slightly crisp, in the egg mixture. I also did not use 1/2 and 1/2. I used whole or skim with some 1/2 and 1/2 mixed in. I used lower fat cheese. It tasted just great and probably cut the calories down significantly.
