    This burrito casserole recipe is absolutely loaded with flavor. It combines seasoned ground beef, refried beans, soft tortillas, a creamy sauce, and tons of melted yummy cheese to create a casserole that's to die for. Also, in addition to being delicious, this burrito casserole recipe also happens to be so, so easy to make. In fact, just 10 minutes of prep time are all you'll need to invest to put it together!

    The Best Burrito Casserole

    If you love burritos as much as I do, then you're going to fall in love with this easy burrito casserole recipe. Trust me, after you make this casserole once, you'll be looking for an excuse to make it every week. It's that good!

    Plus, as I just mentioned, this burrito casserole recipe is super easy to make. It takes just minutes to prepare, and then the oven does all of the heavy lifting after that.

    Seriously, you barely have to lift a finger to make it, and you can have this cheesy burrito casserole on the table in just over 30 minutes!

    Ingredients

    One of the best things about this recipe is that it's made with kitchen/pantry staples. Honestly, if you make burritos as often as I do, then you probably have most - if not all - of the ingredients you'll need to make it at home already.

    Anyway, here's what you'll need to make this burrito casserole recipe:

    • 1 lb. ground beef
    • 2 tsp. onion powder
    • 1 ½ tbsp. taco seasoning
    • 1 ½ cups refried beans
    • 10 oz. can condensed cream of chicken soup
    • ½ cup sour cream
    • 6 flour tortillas (or corn tortillas)
    • 2 cups mixed cheese, shredded cheddar and Monterey jack
    • ½ squeezed lime juice
    • Chopped cilantro for garnish, optional

    Pretty simple stuff, right?

    By the way, if you end up with some extra ground beef, you can just use it to make this Mexican casserole or this John Wayne casserole! They're two of my favorite Tex Mex recipes, so I highly recommend making them some time.

    Ingredient Substitutions And Suggestions

    So, when I make this recipe, I always use the ingredients listed above - I just think it turns out best that way. However, there are plenty of exciting ways to adjust this recipe to make it your own.

    Switch Up The Sauce

    This recipe calls for a creamy sauce made of sour cream and cream of chicken soup, but if you don't have chicken soup - and you don't feel like running off to the store - then you can use cream of mushroom soup instead. Also, if you want to add additional flavor, you can stir in some store-bought enchilada sauce to the creamy sauce mixture. 

    Add Fillings

    Now, of course, the filling in this baked burrito casserole is mostly made up of ground beef and black beans. But, if you prefer a loaded burrito, you can add in things like cooked rice, sliced green onions, black olives, jalapenos, or diced bell peppers.

    Add Toppings

    Now, I think it goes without saying, but this beef burrito casserole recipe is loaded with flavor as is. However, if you want to add even more flavor to it, you can top it with some shredded lettuce, sour cream, chopped tomatoes, or a splash of hot sauce.

    How To Make Burrito Casserole

    Again, this burrito casserole is so, so easy to put together.

    You basically just cook the ground beef, mix it with the beans, layer those ingredients with your soup mixture and tortillas, cover the whole thing in shredded cheese and let it bake in the oven. Yup, it's really that simple!

    Anyway, let's stop wasting time and get cooking!

    Step 1: Prep Work

    First things first, you'll want to preheat your oven to 350°F (180°C) and grease a 10x7-inch baking dish with cooking spray.

    Then, you can set a large skillet over medium-high heat and season it with cooking spray. Once it's hot, add the ground beef to it and cook for a few minutes, breaking it apart until the beef has browned on all sides. 

    Once your ground beef is nicely browned, you can add the onion powder, taco seasoning, and freshly squeezed lime juice to the skillet, followed by the refried black beans. Then, give all of these ingredients a good stir until they're well combined.

    Step 2: Make The Soup Mixture

    Now that the burrito filling is good to go, it's time to make the creamy casserole element of this recipe.

    So, to do that, you'll want to take out a large bowl and add the cream of chicken soup - or mushroom soup - to it along with the sour cream. Then, you'll want to give everything a good mix until the two ingredients combine. Once that happens, you'll want to add a thin layer of this creamy mixture to the bottom of your prepared baking dish.

    Step 3: Assemble The Casserole

    Now that you've got all of the components for this casserole prepped - and the base layer is added to the casserole dish - it's time to assemble everything together.

    So, with that said, you'll want to slice the tortilla shells in half and place the flat sides of them along the edges of the casserole dish. Basically, you want to fully cover the bottom of the casserole dish with the tortillas, and in the middle, they should be overlapping one another. 

    Now, once you've got the tortillas situated in the dish, you can spread ⅓ of the ground beef mixture, ⅓ of the soup and sour cream mixture, and ⅓ of the shredded Mexican cheese blend on top of them. Then, you'll want to repeat layering all of your ingredients 2 more times.

    Step 4: Bake The Casserole

    Now that you've got your beef burrito casserole all prepped and ready to go, you can put it in the oven and bake it for 20-25 minutes - or until the cheese is slightly golden brown on top and bubbly.

    Then, after the casserole is cooked to perfection, you'll want to cool it on a wire rack for 10 minutes before slicing it and serving it. Speaking of serving it, this burrito casserole goes great with some enchilada sauce, queso, or tortilla chips. Enjoy!

    How To Store Burrito Casserole

    This burrito casserole recipe makes 8 servings, so there's a good chance you'll end up with some leftovers. And consider yourself lucky if you do end up with some leftovers because this casserole might even be better the day/s after you make it.

    Anyway, to store your leftover burrito casserole, you can simply put a lid on the casserole dish that you cooked it in, or you can transfer everything to an airtight container. Stored either of these ways, it'll last in the fridge for 3-4 days.

    However, if you want to store your casserole for even longer, you can store it in an airtight container and freeze it for up to 4 months.

    How To Reheat Burrito Casserole

    When you're ready to enjoy your burrito bake again, you'll definitely want to reheat it.

    So, to reheat the casserole, I recommend transferring the leftovers back to a casserole dish and putting the whole thing in the oven for about 10-12 minutes at 350°F.

    However, if you're just looking just to reheat a single serving, then you can save yourself some time and microwave your leftovers. I usually just do 30-second intervals until they're fully reheated - about 2 minutes should do the trick.

    Honestly, out of all the casserole recipes I've made recently, this is one of my family's favorites. It's such a simple yet hearty meal, and there's something for everyone. From the seasoned ground beef to the sharp cheddar cheese and creamy sauce, it's just so, so good!

    Ingredients

    1 lb. ground beef

    2 tsp. onion powder

    1 ½ tbsp. taco seasoning

    1 ½ cups refried beans

    10 oz. can condensed cream of chicken soup

    ½ cup sour cream

    6 flour tortillas 

    2 cups mixed cheese, shredded cheddar and Monterey jack

    ½ squeezed lime juice

    Chopped cilantro, for garnish, optional

    Instructions

    1. Preheat oven to 350°F (180°C).  
    2. Cook the beef in a skillet over medium-high heat until browned on all side.
    3. Add onion powder, Taco seasoning, and squeezed lime juice to the same skillet. 
    4. Add refried beans and stir well to combine everything together. 
    5. In a bowl, combine condensed soup with sour cream. 
    6. Add a thin layer of the condensed soup mixture on the bottom of a 13x9-inch baking dish. 
    7. Cut the tortillas in half and place the flat-cut side along the edges of the baking dish. Two pieces on the sides, and two on top and bottom, overlapping.
    8. Spread ⅓ of the beef mixture, ⅓ of the condensed soup-sour cream mix, and ⅓ of the cheese mix on top of the tortillas.
    9. Repeat the layers twice more until you use up all of the ingredients. Finish by topping it with the remaining cheese.
    10. Bake the casserole for 20-25 minutes.
    11. Cool the casserole on a wire rack for 10 minutes before slicing and serving.
