    This Velveeta broccoli cheese casserole recipe is a simple dish, yet it might be one of the most delicious casserole recipes I've ever made. And that's really saying something because I've made a ton of casseroles in my day.

    I mean, how could you not love a dish that coats tender, fresh broccoli in a rich, smooth, and decadent Velveeta cheese sauce? Honestly, the sauce itself is delicious enough to eat with a spoon! Then, when you throw the buttery Ritz cracker topping into the mix, this recipe just becomes certified 11 out of 10 good.

    To be honest, just writing about it is making me hungry.

    What's even better than how this casserole tastes is how easy it is to make. You basically just have to make the cheese sauce, then pour it over your broccoli, top the whole thing with Ritz crackers, and then let the oven do the rest from there.

    Truth be told, you can have this Velveeta broccoli cheese casserole ready and on the table for dinner in only about 20 minutes! Also, while the casserole is baking, you can make an equally delicious main course to pair with it, like these pan fried chicken breasts.

    As if this cheesy broccoli casserole couldn't get any better, it's also made with really simple ingredients. Honestly, you probably have most - if not all - of them on hand already!

    Anyway, here's what you'll need to make it:

    • 1.5lb. fresh broccoli steamed slightly (or frozen thawed)
    • ⅓ cup butter, divided in half, one half melted
    • 1 tbsp flour
    • ½ cup milk
    • 6oz. Velveeta cheese, cubed
    • Salt, to taste
    • 2 eggs, beaten
    • 1 cup crackers, crushed

    Ingredient Substitutions And Suggestions

    When I make this broccoli cheese casserole recipe, I always use the ingredients listed above since I just think it tastes best that way. However, you can make some adjustments if you'd like to put your own spin on it.

    For example, if you want to swap the Velveeta cheese for another type of cheese, you certainly can. If I'm out of Velveeta cheese, then I like to use a combination of cheddar cheese and cream cheese in its place. I've made the casserole a few times that way, and it was bangin' each time.

    As for the broccoli, if you don't have fresh broccoli florets, then you can swap them for frozen broccoli florets. Just let 'em thaw overnight in the fridge before using 'em. Or pop them in the microwave and steam 'em first.

    How To Make Broccoli Cheese Casserole

    Now it's time for the fun part - it's time to make this broccoli cheese casserole!

    And, as I said before, it's super, super easy to make. Just 3 steps are all you'll have to follow to put this one together. It's so eas a caveman could do it.

    Anyway, let's stop wasting time and get cooking!

    Step 1: Make The Cheese Sauce

    First, you'll want to start by preheating the oven to 350°F (180°C) and greasing a 9-inch casserole dish with some oil or butter.

    Then, you can grab a large saucepan, set it over medium-high heat, and melt half of the butter in it. Once the butter has melted, you can add the flour, then give it a mix, and let it cook for 1 minute.

    Now you'll want to add the milk and Velveeta cheese to the pot. Then, once the cheese starts melting, you can add in the eggs and whisk it with the rest of the ingredients. As soon as the cheese melts, you can add a little salt and pepper and whisk again until you have a smooth cheese sauce.

    Step 2: Assemble The Casserole

    Now that the cheese sauce is ready to go, you can take the steamed broccoli and layer it in the prepared casserole dish. Then, you can pour the Velveeta cheese mixture evenly on top of the broccoli.

    Next, you'll want to crush the Ritz crackers if you haven't done so already and add them to a bowl along with the rest of the melted butter. Now you can give the butter and crackers a little mix to combine, and then you can top the broccoli cheese casserole with 'em.

    Step 3: Bake The Casserole

    Once you've fully assembled your broccoli cheese casserole with Ritz crackers, you can put it in the oven and bake it for about 15-20 minutes, or until the crackers are golden brown on top and the casserole is warmed through.

    If you want to reheat a few servings of the casserole, just put the leftovers in a baking dish and warm it at 350°F for about 10-12 minutes or until it reaches your desired temperature. Alternatively, if you want to reheat a single portion quickly, you can microwave your leftovers in 30-second intervals until fully reheated.
