These sous vide poached eggs are perfectly firm on the outside with an oozy, golden egg yolk and homemade hollandaise sauce that is just to die for.
How good does that sound?
Honestly, the eggs are delicious eaten alone, but even better if you put 'em on toast or even avocado toast to make the ultimate sous vide eggs benedict.
Plus, something else I love about this sous vide egg recipe is how simple it is to make. I mean, it's by far the easiest way to make poached eggs. All you have to do is drop the eggs in the sous vide water bath, let them cook, then transfer 'em to an ice bath. That's it for the eggs, then you just mix the sauce ingredients, and breakfast is served!
Oh, and since making sous vide poached eggs is pretty hands-off, you'll have plenty of time to work on the rest of breakfast. How To Make Sous Vide Poached Eggs
Now it's finally time to make sous vide poached eggs!
As I said before, it doesn't get easier than this recipe if you're craving poached eggs. In about 20 minutes, you'll have the most perfect poached eggs on the table for breakfast.
So without further ado, let's not waste another second and get cooking!
Step 1: Sous Vide The Eggs
First, begin by filling a large pot or container with water and setting the sous vide machine to 165°F.
Then, once you've got the sous vide cooker set up, carefully drop the eggs in the water with a slotted spoon to avoid cracking them. Now you'll want to let the eggs cook in the sous vide for 13 minutes. If you prefer soft boiled eggs to poached, just let them sit in the water bath for an additional minute.
While the eggs are cooking, fill a large bowl of water with ice water. This will be the water bath that stops the eggs from overcooking.
Step 2: Place The Eggs In Ice Water
Once the time is up and the eggs are cooked, carefully remove them from the sous vide water bath and transfer them directly to the ice bath.
When they're cool enough to touch, go ahead and crack four of the eggs on top of your toast, saving one egg for the hollandaise sauce.
Step 3: Make The Sauce And Serve
Now onto the hollandaise sauce! To make it, crack open the last egg into a blender - or large bowl or jar if using an immersion blender - and add the lemon juice, melted butter, cayenne pepper, salt, and pepper to it. Then you can blend all of these ingredients together until you have a smooth sauce.
Finally, serve your sous vide poached eggs on top of the toast with the hollandaise sauce poured on top along with some fresh dill.
Enjoy!
How To Store Sous Vide Poached Eggs
This recipe for sous vide poached eggs makes 5 eggs, so it's perfect for a hearty breakfast. Now poached eggs aren't known for making the best leftovers, so I suggest eating 'em in one go since they're best enjoyed fresh.
But if you do end up with leftovers, you can store the eggs in an airtight container filled with cold water in the fridge for about 3-4 days. When you're ready to enjoy them again, they're best enjoyed either cold or quickly warmed up in a pot of boiling water.
