The Best Sous Vide Egg Bites
If you haven't heard of a sous vide machine, run, don't walk to get one right now! Sous vide is a style of cooking where you can cook all of your favorite foods to perfection, with half of the typical work involved.
It's pretty awesome, and egg bites are one of my favorite foods to make with it right now. This recipe makes fluffy, cheesy egg bites with crispy savory bacon. They remind me of Starbucks egg bites, but I think they're even better! So it's a good thing that it's easy to double or triple this recipe because it's impossible to eat just one. For a breakfast spread, I like to serve them with this Cracker Barrel hashbrown Casserole or Farmer's casserole.
Ingredients
- Eggs- use large eggs.
- Cottage cheese- makes the eggs even fluffier.
- Monterey Jack Cheese and Gruyere cheese- I love this combo, but you can really use any shredded cheese you want.
- Salt
- Bacon- cooked first until extra crispy.
- Gruyere cheese- more for melting on top.
- Fresh chives- for garnish.
How To Make Sous Vide Egg Bites
Step 1: Make The Egg Mixture
First, you're going to start by adding eggs, cottage cheese, Monterey Jack cheese, Gruyere cheese, and salt to a blender. Blend until all the ingredients are well combined.
Step 2: Cook The Eggs
Next, you're going to spray 4 small mason jars with a non-stick cooking spray. Break a piece of bacon into each jar. Then, pour the egg mixture into the jars and place the mason jars into the sous vide machine. Cook at 160ºF for 40 minutes.
Step 3: Serve
Once they've cooked for 40 minutes, remove the eggs from the jars. The cooking spray should make it so the servings fall out easily, but if not, run a knife along the edges. Sprinkle additional shredded cheese on top, and broil until the cheese has just turned brown. Garnish with fresh chopped chives and serve warm. Enjoy!
How I Recommend Storing and Reheating Leftovers
Transfer any leftovers to an airtight container and store them in the fridge for up to a week. To keep for longer, let the eggs cool completely, then store in a freezer-safe bag for about 3 months.
My favorite way to warm the eggs back up is in the oven. Just put them on a baking sheet and warm in the oven at 350°F for about 5 minutes.

- ¼ cup Monterey Jack Cheese, shredded
- ¼ cup Gruyere cheese, shredded
- ¼ tsp. salt
- 4 pieces thin bacon cooked crisp
- ¼ cup Gruyere cheese shredded, use to broil
- Fresh chives for garnish
Instructions
- In a blender add eggs, cottage cheese, Monterey Jack cheese, Gruyere cheese, and salt. Puree until it is a uniform mixture.
- Spray 4 small canning jars with a non-stick spray. Break a piece of bacon into each jar.
- Pour egg mixture into jars. Place jars into the sous vide.
- Cook at 160ºF for 40 minutes.
- Remove eggs from the jars when they are done. Sprinkle additional shredded Gruyere cheese on top, and broil in the oven until they just turn brown.
- Garnish with fresh ciboulette.
Notes
Store any leftovers in an airtight container in the fridge for 5 days. They make a delicious quick breakfast for the week. Just reheat in the oven at 350°F for about 5 minutes.
