The Best Pancakes Without Baking Powder
I used to make pancakes every weekend growing up with pancake mix, and these fluffy pancakes are reminiscent of the boxed kind. If I'm being honest though, I think this banking powder free pancake recipe is even better.
It seriously just creates the perfect homemade thick and fluffy pancakes. And that's saying something because I've messed around with a ton of pancake recipes.
Plus, these no baking powder needed pancakes are a breeze to make too. All they require is about 10 minutes worth of prep work, and then they cook up in just a few minutes. Trust me, these crowd-favorite flap jacks will become a family breakfast staple in no time.
Oh, by the way, if you're looking for something to pair with these pancakes, this Cracker Barrel hashbrown casserole recipe, this million dollar bacon recipe, and this breakfast sausage recipe, all pair really well with 'em. Or, if you're hosting a large family breakfast - and want double the sweetness - try serving these pancakes along with this French toast casserole. The pancakes are made on the stove, while the casserole is made in the oven, so you can make them at the same time!
Ingredients
One of the best things about making these pancakes is that you only need a handful of simple ingredients to whip 'em up. In fact, I can almost guarantee that you have everything you need to make them at home already.
Anyway, here's what you'll need to make 'em:
- 1 cup all-purpose flour
- ⅔ cup warm milk (or almond milk)
- 3 eggs, separated
- 1 pinch of salt
- ¼ cup sugar
- Butter, for cooking and serving
- Fresh berries, to serve with
- Syrup or honey, to serve with
See what I mean? Pretty sure you don't have to run to the store!
By the way, if you're looking for another easy pancake recipe, you can use almost all of these same ingredients to make these eggless pancakes and these pancakes without milk. So you can give those a try next and see which one you like better - I still can't decide since they're both so good in their own ways.
Oh, and for a pancake recipe with fewer ingredients, you can make these Bisquick pancakes.
Ingredient Substitutions and Suggestions
Now, I love making these pancakes with everything that I listed above - I just think it tastes best that way. However, you can add a few ingredients - or substitute a few - if you'd like. Doing so may even save you a trip to the grocery store.
Make These Pancakes Dairy Free
So, if you'd like to make these pancakes dairy free, you can use any dairy free milk to make them. Dairy free milks, like almond milk, oat milk, coconut milk, or soy milk will all work great. In fact, I almost always use almond milk when I make these pancakes for myself.
Use Add-ins To Add Flavor
If you'd like to up the flavor of these pancakes, you can always add in some extra ingredients to do so.
I actually like to add some vanilla extract, a nice drizzle of maple syrup, and cinnamon into my pancake batter from time to time. But, with that said, you could even add in some chocolate chips, nuts, or even some blueberries or bananas to take these pancakes to Flavortown.
How to Make Pancakes Without Baking Powder
As I mentioned a few times already, these no baking powder pancakes are so, so easy to make.
Essentially, all you have to do is whisk the egg whites and sugar into stiff peaks in one bowl, then in another bowl, you'll want to mix the egg yolks with milk and flour, combine the two together to form a pancake batter, and cook everything to golden brown fluffy perfection.
Anyway, let's not waste another second and get started!
Step 1: Whip The Egg Whites
First things first, you'll want to separate your eggs - putting the yolks in one bowl and the whites in another bowl. Then, with an electric hand mixer - or stand mixer - you'll want to whip the egg whites with a pinch of salt until foamy and soft peaks form.
Now, once you've got some soft peaks going on in your bowl, you can gradually add in the sugar and beat everything together until the egg whites are just starting to hold stiff peaks.
Step 2: Make the Pancake Batter
Next, in a medium bowl, you'll want to beat the egg yolks with the milk of your choice. Then, once the egg yolks and milk are combined, mix in the flour until everything is well combined.
Now that you have the combined flour and egg yolk mixture, you'll want to gently fold ⅓ of the whipped egg whites into the egg yolk mixture to loosen the batter and then add in the rest of the whipped egg whites after that's looking good.
Step 3: Cook The Pancakes
Ok, now that the pancake batter is good to go, it's time to cook the pancakes!
So, to do that, you'll want to start by heating a large non-stick skillet - or pan - over medium heat.
Then, once the skillet is preheated, you can coat it with butter - or non-stick cooking spray - and drop a ¼-1/3 cup of the batter onto the skillet. You'll want to let the pancakes cook for a couple of minutes until bubbles appear on the surface. Then when a bubble pops, you can gently flip the pancake and cook it for 1 minute more or until the pancakes are golden brown on each side.
Step 4: Serve the Pancakes
Finally, once you've cooked up all of the pancake batter, you can serve your homemade pancakes warm with some fresh berries, some butter, and maple syrup on top.
Enjoy!

How to Store Pancakes Without Baking Powder
This recipe for pancakes without baking powder makes 8 large pancakes, so it's a great recipe to make for a big family breakfast! There's even a possibility that you might have some leftovers.
Speaking of leftovers, if you do end up with some, you can store 'em in either an airtight container or wrapped tightly in plastic wrap in the fridge. Stored either of these ways, the pancakes should last in the fridge for 2-3 days.
Alternatively, if you want to store the pancakes for even longer, you can store 'em in the freezer for up to 3 months.
Honestly, I love making a big batch of these homemade pancakes and freezing a bunch to have a quick and delicious breakfast on hand. With that said, to freeze 'em, just put all of your leftover pancakes on a baking sheet and pop them in the freezer until they're solid. Then, once they're frozen you can transfer them to a freezer-safe bag - or airtight container - and store them in the freezer.
How to Reheat Pancakes
Whenever you're ready to enjoy these delicious pancakes again, you'll want to warm 'em up since they're best enjoyed hot.
So, to reheat the pancakes, you can just microwave them in 15-second increments until warm.
Alternatively, if you're reheating multiple pancakes at once, you can put them all on a baking sheet and warm them in the oven at 350°F for about 5 minutes - or until they reach your desired temperature.
