It's just jam-packed with flavor and deliciousness. It consists of savory cooked chicken, hearty black beans, a rich, creamy sauce made from cream of chicken soup, and of course, nacho cheese Dorito chips layered on the bottom. It's crunchy, it's creamy, it's cheesy, and it's a whole 'lotta yummy.
Seriously, how good does all of that sound?!
Anyway, what I love most about this Mexican chicken casserole is how easy it is to make. All you have to do is layer everything in a baking dish, sprinkle some cheese on top, then let it bake in the oven. I know it sounds too good to be true, but that's really all there is to it.
Also, since this casserole recipe is so easy to make, you'll have plenty of time to whip up a side dish to serve with it. My favorite Mexican side dish to pair with this recipe is this Chipotle guac recipe served alongside some air fryer tortilla chips.

Crowd pleaser. Anyone who loves tacos, burritos, or really any Mexican food can't get enough of this casserole, so it's the perfect busy weeknight meal for your family or dinner to impress any guests.
Winning combination. The creamy chicken mixture with the melty cheese and crunchy chips is a combo that's just to die for.

Tips To Make The Best Recipe
- Use crushed tortilla chips instead of Doritos if that's all you have at home.
- Use any shredded chicken, cubed cooked chicken, or any leftover chicken instead of a rotisserie chicken from the store.
- Add taco seasoning to the creamy mixture for even more flavor.
- Top the baked casserole with red enchilada sauce, sour cream, hot sauce, and green onions.
How To Store Mexican Chicken Casserole
In the fridge: Put a lid on the casserole dish that you cooked everything in, or transfer the casserole into an airtight container. Stored either of these ways, it'll last in the fridge for up to 3-4 days.
In the freezer: If you want to keep it for longer, you can store the cooled casserole in an airtight container in the freezer for up to 4 months.
Reheating: Put the Mexican chicken casserole back in the casserole dish and warm it up in the oven at 350°F for about 10-12 minutes. Let the frozen casserole thaw in the fridge or add more reheating time.

Just reading through the recipe: calls for 3 cups crushed chips, but only one cup is used in putting the casserole together. What happens to the other 2 cups of crushed chips?
Brendan Cunningham
Sorry about that, you sprinkle them on top of the casserole before adding the shredded cheese and baking.
