    The Best Mexican Chicken Casserole

    If you love Mexican food or just want to break out of your regular dinner routine, then you've got to try this delicious Mexican chicken casserole recipe!

    It's just jam-packed with flavor and deliciousness. It consists of savory cooked chicken, hearty black beans, a rich, creamy sauce made from cream of chicken soup, and of course, nacho cheese Dorito chips layered on the bottom. It's crunchy, it's creamy, it's cheesy, and it's a whole 'lotta yummy.

    Seriously, how good does all of that sound?!

    Anyway, what I love most about this Mexican chicken casserole is how easy it is to make. All you have to do is layer everything in a baking dish, sprinkle some cheese on top, then let it bake in the oven. I know it sounds too good to be true, but that's really all there is to it.

    Also, since this casserole recipe is so easy to make, you'll have plenty of time to whip up a side dish to serve with it. My favorite Mexican side dish to pair with this recipe is this Chipotle guac recipe served alongside some homemade tortilla chips.

      Ingredients

    The ingredient list for this Mexican chicken casserole recipe is also super simple. In fact, I'm willing to bet you already have most - if not all - of the ingredients, you'll need to make it at home already!

    Anyway, here's what you'll need to make this Mexican chicken casserole:

    • 3 cups crushed Dorito Nacho cheese chips (or tortilla chips)
    • 14 oz. can black beans, rinsed and drained
    • 2 cups chopped rotisserie chicken
    • 1 tsp cumin powder
    • 3 cups cream of chicken soup
    • 12 oz. can chopped tomatoes with juices (or tomatoes with green chiles)
    • 1 ½ cups shredded cheddar cheese
    • 1 ½ cups shredded mild cheddar cheese or Monterey Jack
    • 2 jalapeno peppers, thinly sliced for serving (optional)

    Pretty simple stuff, right?!

    While I recommend making this Mexican chicken casserole with the ingredients listed above, there are plenty of exciting ways to put your own spin on this recipe.

    With that said, I'll go over some of my favorites below.

    Switch Up The Chips

    In my opinion, Dorito's are perfect for adding tons of cheesy flavor to this recipe. But if you're just looking for a crunch with a more subtle flavor, you can use crushed tortilla chips -  both regular tortilla chips and flavored tortilla chips work well - instead!

    Use Shredded Chicken Breasts

    Now, when it comes to the chicken in this recipe, I prefer to use shredded rotisserie chicken since it's so easy to pick up from the store, and it saves some time. With that said, any shredded or cubed cooked chicken will work in this recipe. You can even use leftover chicken and just shred it before using it in this recipe. 

    Experiment With Add-Ons

    As for possible add-ons, I usually keep it simple and serve my casserole with a little sour cream, or a little hot sauce. With that said though, red enchilada sauce goes really well with it too.

    By the way, if you want to add more substance to this casserole, then you can mix in one cup of cooked rice along with the black beans and chicken. Or, you could even use refried beans and add in some chopped green onions or green chilies as well.

    How To Make Mexican Chicken Casserole

    As I mentioned earlier, it could not be easier to make this Mexican chicken casserole.

    This recipe is just so, so easy to put together. Everything goes straight into the baking dish, and it takes no more than 40 minutes from start to finish to make - most of which is hands-off baking time.

    Anyway, let's stop wasting time and go over the steps you'll want to follow to make this Mexican chicken casserole!

    Step 1: Prep Work

    First, begin by preheating the oven to 350°F (180°C) and greasing a 9x5-inch casserole dish with some oil or non-stick cooking spray.

    Then, in the prepared casserole dish, you'll want to sprinkle 1 cup of crushed Dorito Nacho chips - or crushed tortilla chips - over the bottom of the baking dish. Now, after you've taken care of that, you'll want to add the cooked chicken and black beans on top of the chips.

    Step 2: Assemble The Casserole

    Once you've built the first two layers, you'll want to take out a large bowl and mix the cumin and cream of chicken soup together. By the way, for a little extra spice, you can also mix in some chili powder as well.

    Anyway, now you can pour this spiced soup mixture over the beans and chicken. Then, you'll want to add the can of chopped tomatoes - with the juices removed - evenly on top of everything in the casserole dish.

    Finally, you can add the rest of the crushed chips along with a heavy dose of both sharp cheddar cheese and mild cheddar cheese on top of that.

    Step 3: Bake The Casserole

    So, now that you've finished assembling the casserole, you can bake it for about 30 minutes - or until the cheese is slightly bubbly.

    Finally, once it's cooked, you can serve it with some sliced jalapenos or some sour cream on top, and enjoy!

    How To Store Mexican Chicken Casserole

    This recipe for Mexican chicken casserole makes 8 servings, so it's the perfect casserole to feed a big hungry family. Honestly, it's so good that you probably won't have any leftovers because everyone will go in for seconds or thirds!

    But if you're lucky and do end up with some leftovers, you can either put a lid on the casserole dish that you cooked everything in or you can transfer the casserole into an airtight container. Stored either of these ways, it'll last in the fridge for up to 3-4 days. 

    Alternatively, if you want to keep it for longer, you can store the cooled casserole in an airtight container in the freezer for up to 4 months.

    How To Reheat Mexican Chicken Casserole

    When you're ready to enjoy this Mexican chicken casserole again, you'll definitely want to warm it up first.

    So, to reheat the leftovers, I recommend putting them back in the casserole dish and warming them up in the oven at 350°F for about 10-12 minutes.

    On the other hand, if you just want to reheat a single serving, then you can microwave your leftovers. I usually just heat them in 30-second intervals until it's fully warmed through.

      Just reading through the recipe: calls for 3 cups crushed chips, but only one cup is used in putting the casserole together. What happens to the other 2 cups of crushed chips?

        Sorry about that, you sprinkle them on top of the casserole before adding the shredded cheese and baking.
