- Add the diced onion, garlic, and red bell pepper to the skillet and cook them, stirring frequently, until soft, for about 5 minutes.
- Transfer the meat, garlic, onion, and pepper to the casserole dish. Then add corn, black bean, and tomato and stir.
- Add tortilla chips on top of the casserole and bake for 15 minutes.
- After 15 minutes of baking, add shredded cheese and return to the oven and bake 15 minutes more until the cheese melts.
- Serve warm, and enjoy!
