How To Make Mexican Tater Tot Casserole
1. Prep: Preheat oven to 350°F and lightly grease a 9x13 inch baking dish or something similar in size with nonstick cooking spray.
2. Cook the ground beef: Heat a large skillet over medium heat and add some oil to it. Add the ground beef to the skillet and cook, breaking it apart, until it's browned on all sides. Drain the excess fat from cooking the beef. Season the beef with onion powder and Taco seasoning mix and stir to combine it with the cooked ground beef.
3. Add the flavor: Add the diced jalapeno peppers, kidney beans, corn, enchilada sauce, and 1 cup of cheddar cheese to the skillet. Stir well to combine everything.
4. Assemble and bake: Transfer the ground beef mixture to the prepared baking dish. Top the beef evenly with the frozen tater tots. Bake the casserole for 35-40 minutes. Remove from the oven and top with remaining cheese. Bake for another 5 minutes or until the cheese is melted.
5. Serve: Cool the casserole slightly before serving. Transfer the casserole to plates and serve with sour cream on top. Enjoy!
Tips To Make The Best Recipe
- Switch out the ground beef and use ground turkey, ground chicken, or even ground pork for a leaner meat mixture.
- If the taco seasoning isn't sticking to the meat, add a splash of water to the skillet and let the ground beef simmer for a few minutes.
- Use any shredded cheese you want, like a Mexican cheese blend, Monterey Jack cheese, or pepper jack cheese, to make it spicier.
- Use red enchilada sauce, green enchilada sauce, or even just a taco sauce.
- Add any of your favorite taco toppings to the casserole, like diced tomatoes, pinto beans, refried beans, or diced green chilies. Anything goes!
