Chipotle always seems to have the best fix-ins, and Chipotle's corn salsa is, without a doubt, one of my favorites. I mean, it's fresh, crunchy, and packed with flavor.
And while the one from Chipotle is delicious, I think this copycat corn salsa recipe might be even better than the one from the restaurant! Trust me, when you get a taste of this flavorful favorite, you'll see what I'm talking about. This salsa just has the perfect ratio of crunchy, sweet corn, red onion, peppers, and fresh lemon and lime juice. You can honestly taste the freshness of the ingredients in each and every bite.
Not to mention, it's just super easy to make. All you have to do is roast the poblano pepper, then just mix all of the ingredients together. The whole process should take you no more than 5-10 minutes.
It's seriously so simple, and while the poblano peppers are roasting, you can whip up this copycat Chipotle guac recipe to serve with it. - ⅓ cup red onion, chopped
- 1 poblano pepper, roasted
- 1-2 jalapeno peppers, seeded if desired
- 1 tablespoon fresh lime juice
- ½ tablespoon fresh lemon juice
- 3 tablespoon chopped cilantro
- Salt, to taste

Ingredient Substitutions and Modifications
Now, I always make this corn salsa as written because it's just so darn good and because it turns out just like the iconic corn salsa Chipotle serves. However, you can always make a few modifications to this corn salsa recipe to change it up a bit.
Switch Up The Corn
This recipe is all about convenience, so if you don't have canned corn, you can always use frozen corn or fresh corn instead. In fact, I prefer to use fresh corn to make this salsa in the summertime since it's just perfectly ripe and so darn sweet. With that said though, if you use frozen corn to make it, just let it completely thaw on a baking sheet and strain the excess liquid from it before mixing the ingredients together.
Oh, and when it comes to the variety of corn to use for this salsa, you can definitely use a mix of white sweet corn along with regular yellow corn kernels.
Switch Up The Peppers
Now, if you've never had poblano peppers before, they're similar to green bell peppers, except they have a slightly spicy kick. So, if you don't want your corn salsa to be spicy, you can use bell peppers in their place and in the place of the jalapenos as well.
How to Make Chipotle Corn Salsa
As I mentioned before, this Chipotle corn salsa recipe is made in only 2 simple steps. Basically, you'll just roast the poblano pepper and then chop up all of the vegetables and mix them together.
It's really so quick in easy. Honestly, it'll only take about 10 minutes from start to finish to put it together.
Anyway, with all that said, let's not waste another second and jump into the recipe!
Step 1: Roast the Poblano pepper
First, you'll start by roasting the poblano pepper. So, to do that, you can place the pepper directly over the flame of a gas stove and roast it until it's blackened. The best way is to hold it with grill tongs and rotate the pepper around, so it evenly cooks on all sides.
Alternatively, you can put the pepper on a baking sheet and roast it in the oven at 400°F for about 20 minutes.
Once the poblano pepper is roasted, let it cool and then peel off the black skin and remove the seeds. After that, you can chop the roasted poblano pepper into smaller pieces.
Step 2: Mix the Ingredients
Now, if you haven't done so already, you'll want to drain the canned corn and chop up the red onion and jalapenos. Then, after you've taken care of that, you can add the corn, red onion, poblano pepper, and jalapenos to a medium bowl and give everything a good mix. Now, once those ingredients are mixed together well, you can add in the lemon juice, lime juice, and fresh cilantro and season everything to taste with salt.
Finally, give the salsa one more good stir to combine everything together. Then, serve it, and enjoy!
How to Store This Copycat Chipotle Corn Salsa
This recipe for Chipotle's corn salsa makes 6 servings, so it doubles as the perfect dip to serve as an appetizer at a party and also as an add-in to family taco night.
By the way, if you find yourself with leftovers, don't worry, this corn salsa is easily stored. Simply transfer the leftovers to an airtight container and store them in the fridge. Stored this way, the corn salsa will last for around 3-4 days.
Alternatively, if you want to store this corn salsa for even longer, you can transfer it to an airtight container - or freezer-safe bag - and store it in the freezer for 1-2 months. Then, whenever you want to enjoy it again, just let the frozen corn salsa thaw in the fridge overnight.
