- ½ tsp. Pepper or White Pepper

I downsized the recipe by 2/3rds and used heavy cream. It was a little disconcerting at first, as the xanthan gum started clumping immediately when I mixed it in the cream. The clumps whisked out as it heated up and the gravy turned out fantastic!
I may try starting with a roux of the butter and xanthan gum before adding the cream next time, but I'm positive that there will be a next time!
