This instant pot potato salad has everything you love about classic potato salad, but it takes just over 10 minutes to make! And along with being super quick to whip up, this easy potato salad is so flavorful and makes for one of the most versatile side dishes.

Ingredients

2 Big Yukon Potatoes

1 Cup of water

2 Hard Boiled Eggs

¼ Cup Red Onion, chopped

¼ Cup Pickles, chopped

¼ Cup Mayonnaise

2 Tbsp. Dijon Mustard

1 Lemon, juiced

Chives or Green Onions

Salt and Pepper

Instructions

  1. Place the potatoes with water in the instant pot and cook at high pressure for 10 minutes. Release all the steam and open. Let them cool completely.
  2. Remove the skin of the potatoes, cut them into cubes, and add to a large bowl.
  3. Add the hard boiled eggs, red onion, pickles, mayonnaise, and Dijon to the bowl of potatoes. Mix everything well and season with lemon juice, salt and pepper.
  4. Serve with chives or green onions.
