    The Best Easy Brookie Recipe

    These brookies are a fudgy brownie and chewy chocolate chip cookie all in one. And the combination of these two beloved baked goods makes for an easy homemade dessert like no other. Not to mention it takes just 45 minutes to whip up this brookie recipe from scratch!

    THE BEST BROOKIES

    If you've ever had the dilemma between making chocolate chip cookies or brownies, this brookie recipe settles the debate. 

    With these brookies, you get everything you love about cookies and brownies all in one recipe. Say what?!

    I know, it sounds too good to be true, but trust me, it's the reality you're about to live in.

    This recipe combines a layer of chocolatey and fudgy homemade brownie batter with the most delicious cookie dough topping that gets baked to absolute ooey-gooey perfection - it's simply a dessert masterpiece.

    Also, making both components is incredibly simple, so it's fun to make this recipe with kids too!

    Now, if you want to make these brookies for game-night, watching a movie, or show, you have to whip up this Instant Pot Popcorn. It takes minutes to make and goes so well with this cookie brownie deliciousness.

    INGREDIENTS

    So, if you've ever made homemade brownies or cookies before, you probably have used every ingredient you'll need for this brookie bars recipe.

    And since they are such common baking ingredients, odds are you have all of them in your kitchen already!

    Here is what you'll need for the brownie layer:

    • 5 oz. Dark Chocolate (60%-70%)
    • ¼ cup Unsalted Butter
    • 2 Eggs (at room temperature)
    • ¼ cup Brown Sugar
    • ¼ cup Granulated Sugar
    • ½ tbsp. Vanilla Extract
    • ½ tsp. Baking Powder
    • ⅓ cup All Purpose Flour
    • 4 tbsp. Dutch Cocoa Powder
    • Pinch of Sea Salt

    For the cookie layer:

    • ½ cup Unsalted Butter
    • ⅓ cup Granulated Sugar
    • ⅓ cup Brown Sugar
    • 1 Egg (at room temperature)
    • ½ tsp. Vanilla Extract
    • 1 cup All Purpose Flour
    • 1 tsp. Baking Soda
    • Pinch of Sea Salt

    And to top of both layers:

    • 1 ½ cup chocolate chips

    Now, the ingredient list may look long, but we'll be using many of the same ingredients to make both components of these brookies.

    HOW TO MAKE BROOKIES

    The process of making both the brownies and cookies is super easy. 

    And if you've ever made either separately before, this recipe will be a breeze. 

    As I mentioned earlier, this is a fun recipe to make with kids. So if you have any, round up your little helpers, get out your ingredients, and let's make some brookies!

    STEP 1: MAKING THE BROWNIE BATTER

    First things first, preheat your oven to 350 degrees Fahrenheit (180°C) and line an 8x8 inch baking tray - or brookie tray as I like to call it - with parchment paper. 

    Next, you will melt the dark chocolate and butter, and there are two ways to do this. 

    It's silver bowl with melted butter and chocolate in it. A rubber spatula is submerged in the bowl.

    The first method is to place a metal bowl over a boiling pot of water, making sure only the steam touches the bottom of the bowl, and melt the chocolate and butter together. 

    The other method is to put the butter in a microwave-safe bowl and microwave until melted and bubbling. Then add in the dark chocolate and whisk until it is completely melted, and a "sauce" consistency forms. 

    Then, when that's taken care of, you can set that bowl aside, and start working on combining some of the other ingredients together.

    So, you'll take out a large mixing bowl and add in the eggs, granulated sugar, brown sugar, and vanilla extract and whisk these ingredients together until they're combined.

    Then, mix in the melted chocolate and butter, and sift in the rest of the ingredients - the baking powder, flour, cocoa powder, and a pinch of sea salt.

    Finally, mix all of the ingredients together until just combined. And make sure you do not overmix the batter! 

    STEP 2: MAKING THE COOKIE DOUGH

    First, take out another mixing bowl and add in the butter, granulated sugar, and brown sugar. Mix these ingredients with a hand or stand mixer until it is creamy and pale yellow in color. 

    Then add in the egg and vanilla extract and mix until they are well incorporated.

    Next, sift in the flour and baking soda and add in the salt.

    Then, mix the ingredients with a rubber spatula until they are fully combined - again, make sure not to overmix!

    STEP 3: ASSEMBLING AND BAKING

    Ok, so by now, your oven should be preheated, and you should have a bowl of brownie batter and a bowl of cookie dough.

    First, scoop half of the brownie batter onto the bottom of the tray.

    Then scoop the cookie dough, forming it into balls, and place them on top of the brownie batter.

    Next, fill the spaces left between the cookie dough balls with the other half of the brownie mixture.

    Lastly, sprinkle chocolate chips evenly on top and use a rubber spatula to combine the brownie batter and cookie dough by swirling them together. 

    Bake for about 35-40 minutes or until a toothpick comes out clean when inserted into the center.

    Then when your brookies are done, take them out of the oven and transfer the pan to a wire rack to cool completely before cutting. 

    Once cooled, cut into 12 squares, serve, and enjoy!

    HOW TO STORE BROOKIES

    So, this delicious recipe will make about 12 brookie bars, depending on how you cut them. 

    If your family is around when these come out of the oven or if you are serving them at a party, it's hard to believe that you'll have any left! 

    But if you do, you can store your brookies on the counter in an airtight container for up to 5 days. Then whenever you want one, just take it out of the container and eat it, or pop it in the microwave for a few seconds to warm it up. 

    And if you still have some leftovers, just put your brookie bars in a freezer-safe bag, and they'll last in the freezer for up to 6 months. Then, you can either enjoy 'em frozen or put your brookie in the microwave for a few seconds to warm it up, and make it ooey-gooey.

    Ingredients

    Brownies:

    5 oz. (140g) Dark Chocolate (60%-70%)

    ¼ cup Unsalted Butter

    2 Eggs (at room temperature)

    ¼ (55g) cup Brown Sugar

    ¼ (50g) cup Granulated Sugar

    ½ tbsp. Vanilla Extract

    ½ tsp. Baking Powder

    ⅓ cup (41g) All Purpose Flour

    4 tbsp. Dutch Cocoa Powder

    Pinch of Sea Salt

    Cookies:

    ½ cup Unsalted Butter

    ⅓ cup (67g) Granulated Sugar

    ⅓ cup (73g) Brown Sugar

    1 Egg (at room temperature)

    ½ tsp. Vanilla Extract

    1 cup (120g) All Purpose Flour

    1 tsp. Baking Soda

    Pinch of Sea Salt

    1 ½ cup chocolate chips

    Instructions

    1. Preheat the oven to 350ºF. Line a 8 x 8 inch brownie tray with parchment paper.
    2. To make the brownie batter: Melt the dark chocolate and butter - either place a metal bowl over boiling water (making sure that only the steam touches the bottom of the bowl) and melt the chocolate and butter together. Or melt butter in the microwave until bubbling and add in chocolate, whisk until completely melted.
    3. In another bowl, mix the eggs, white and brown sugar, and vanilla extract and whisk these ingredients until they're well combined. Then mix in the chocolate and butter mixture.
    4. Sift the baking powder, flour, cocoa powder, and a pinch of sea salt and combine with wet ingredients - mix until just combined, don't overmix.
    5. To make the cookie dough: Add the butter, granulated sugar, and brown sugar to a mixing bowl. Use a hand or stand mixer and mix it until it is creamy and pale yellow in color. 
    6. Add in the egg, vanilla extract, and mix until well incorporated.
    7. Sift in the flour, baking soda, and salt. Mix with a rubber spatula until fully combined, don't overmix
    8. Place half of the brownie batter on the bottom of the brownie tray and scoop the cookie dough into balls and put on top. Fill the spaces left between the cookie dough balls with the other half of the brownie mixture. Add the chocolate chips on top and use a rubber spatula to combine everything by making swirls.
    9. Bake for 35-40 minutes, or until you insert a toothpick in the center and it comes out dry. Cool tray on a wire rack before cutting. Enjoy!
