My Favorite Meatloaf That's Made With Stuffing
There's just something so comforting about a giant traditional meatloaf for dinner, and this recipe takes that to a whole other level of yumminess.
The combination of ground beef with a few simple seasonings, a hearty stuffing mix, and that sweet, rich ketchup glaze makes for a ridiculously flavorful meatloaf. Gah, just thinking about it makes me hungry!
By the way, while the meatloaf is cooking, you'll have plenty of time to whip up a delicious side dish to pair with it. Some of my favorite sides to serve with this meatloaf are cheesy mashed potatoes, sweet potato biscuits, Martha White cornbread, or turnip greens.
Ingredients You'll Need
- Ground beef- I used 80/20 lean ground beef. You can swap it for ground turkey, ground chicken, or a combination of either of those two with ground beef.
- Worcestershire sauce
- Mustard
- Onion powder
- Eggs- three medium ones.
- Stuffing mix- I like to use Stove Top stuffing mix.
- Ketchup
- Honey- or maple syrup.
By the way, if you have these ingredients in your kitchen already, then you can easily make this Southern meatloaf recipe too! So, if you're a meatloaf fanatic like I am, I highly recommend giving that recipe a go sometime.
Oh, and if you're grabbing a box of the Stove Top stuffing, pick up an extra one, you can make this chicken and stuffing casserole with it too.
How To Make Stuffing Meatloaf
Step 1: Prep Work
First, begin by preheating the oven to 350°F (180°C), and then prepare your loaf pan by lining it with aluminum foil - or parchment paper - and coating it with nonstick cooking spray.
Then, in a large mixing bowl, you'll want to combine the ketchup with the honey, spices, mustard, and Worcestershire sauce. Give these ingredients a good mix with a fork or whisk until they combine, and give it a taste to see if the seasoning needs any adjusting.
If you like your ketchup glaze to be sweeter, you can add a little brown sugar to it to make that happen. I do this from time to time, and it's always a hit.
Step 2: Make The Meat Mixture
Once your ketchup mixture is fully combined, you'll want to take out a second large mixing bowl to make the meatloaf mixture.
So, to do that, you'll want to combine the ground beef, eggs, and Stove Top stuffing mix in the mixing bowl. And, if you need to, you can combine the ingredients with your hands. Then you can add ⅓ of the ketchup glaze and stir everything thoroughly to combine.
Step 3: Bake and Serve
Now that you've finished making the meat mixture, you can transfer it to your prepared loaf pan and cover it with the remaining ketchup glaze. You'll want to spread the glaze over the stuffing meatloaf evenly with a rubber spatula.
Now, after you've got the glaze added to it, you can bake your meatloaf for about 55 minutes or until the internal temperature reaches 160°F when checked with a meat thermometer.
Finally, to finish up, you'll want to allow the meatloaf to cool slightly before serving. Then, when it's cool enough to handle, serve warm with some mashed potatoes and green beans, and enjoy.
How To Store and Reheat Leftovers
If you are lucky enough to end up with some leftovers, you can store them in an airtight container and keep them in the fridge for 4 days. Alternatively, if you want to store the meatloaf for even longer, let it cool completely, then store it in an airtight container - or freezer-safe bag - and freeze it for 4 months.
My favorite way to reheat leftovers is to transfer the meatloaf back to the loaf pan - or a baking dish - and put it in an oven set to 350°F for about 10-12 minutes - or until it's fully warmed. The toaster oven works too. Just check it every 5 minutes or so to see how it's coming along.
By the way, if you're planning on just reheating a serving or two of the yummy meatloaf, the microwave will do the trick. Just heat it in 30-second increments until it's hot.
