It has tender meat cooked in a flavorful broth of peppers and spices, and then all of that deliciousness is served with instant ramen noodles and topped with an assortment of fresh veggies.
Gah, it's just so good!
Even the pickiest of eaters in your family will love this dish, I know mine do.
Now, my favorite part about this ramen birria recipe, aside from how tasty it is, is its convenience. Only 10 minutes of prep time are needed, then the slow cooker does the hard work of breaking down the beef until it's tender and juicy. Honestly, homemade ramen couldn't get any easier to make than this.

So, this recipe calls for instant ramen, and I used this because it is the most convenient option. But, of course, you can use fresh noodles instead of instant if you prefer. Just keep in mind the cooking time will vary if you're using fresh ramen noodles.
As for the toppings, what I listed above are my recommendations, but you can add whatever toppings you want. Some other great toppings to go along with the ones I mentioned are shredded cabbage, toasted sesame seeds, or diced green onion. All of these toppings go great on my creamy ramen too.
How To Make Birria Ramen
Even if you've never made ramen - or birria stew - before, you'll have no problem making this birria ramen. As I mentioned earlier, the crock pot really does the hard work for you.
You basically make a rich sauce with your guajillo chiles, then sear the beef, and add everything into your crock pot. Then, the crockpot does all of the heavy lifting until it's time to add the noodles. Once the noodles are cooked, dinner is ready. It's a simple 4 step process that's basically no-fail.
With that all that said, let's dive into how to make birria ramen!
Step 1: Make The Sauce
First, we'll start by making the richly flavorful sauce. Begin by boiling water, then add it to a blender along with the seeded guajillo and ancho peppers.
Next, add the cumin, garlic, dried oregano, cinnamon, and bay leaf and blend until everything is smooth and combined. Then, you can transfer the sauce to a strainer to remove any big chunks and set it aside for later.
Step 2: Prepare The Beef
Now it's time to prepare the fork tender birria meat. Start by evenly seasoning the beef with salt and pepper.
Then, heat a non-stick skillet to medium-high heat on the stovetop and sear the meat for a minute on both sides until golden brown.
Step 3: Cook The Beef and Ramen
Next, you can add the seared beef and prepared sauce from earlier to your slow cooker and let it cook on low for 5-7 hours, or until the beef is fork-tender. If you can't easily shred the beef with two forks, let it continue cooking.
Now, when the beef is almost done cooking, you can make the instant ramen noodles. So, to do that, just add your instant ramen noodles to a pot of boiling water let them cook until soft, and then strain them.

Finally, when everything is cooked, it's time to serve!

Now, this may seem obvious, but it's easy to reheat ramen and have it turn out just as good - if not better - the following day. When it comes to reheating, you have a couple of options.
The quickest way is to microwave your leftover birria ramen in 20-second increments until it is thoroughly warm. With that said, I recommend putting a microwave-safe plate over the top of your bowl - it will just help keep your microwave clean from splashes.
Alternatively, you can reheat the leftover ramen on the stovetop in a pot set to medium heat. Cook until it's warm, stirring frequently to make sure everything reheats evenly.
