How To Make Chicken Cobbler Casserole
1. Begin assembling the casserole. Before you get into the recipe, preheat the oven to 350°F (175°C) and grease a 9-inch baking dish with melted butter. Layer the cooked chicken on top of the butter, followed by the frozen veggies.
2. Make the cream sauce. In a medium sized bowl, combine the chicken broth with the cream of chicken soup. Pour this mixture over the chicken and veggies and mix.
3. Make the biscuit topping. In a separate bowl, combine the Cheddar Bay biscuit mix - and half the seasoning packet - with milk and shredded cheddar cheese. Pour the biscuit mixture over the top of the chicken and veggies and tilt the dish so everything is fully covered. Bake the chicken cobbler for 50-55 minutes.
4. Make the butter topping. While the cobbler is baking, combine the melted butter with half of the seasoning packet.
5. Brush the cobbler with butter and serve. Once the cobbler is fully cooked, remove it from the oven and brush the biscuit topping with the butter spice mix. Serve warm and enjoy!
My Tips For Making The Best Recipe
- You can use any cooked chicken cut into cubes or shredded chicken. I suggest just grabbing a rotisserie chicken from the store to make the recipe super convenient.
- I've made this recipe with a variety of frozen vegetables, including frozen corn, diced bell peppers, and spinach, and it always turns out great. So feel free to use any type of frozen mixed vegetables you have on hand.
- Feel free to use other types of shredded cheese, like mozzarella cheese, swiss cheese, or parmesan cheese.
- Make sure you do not stir the layers together. Otherwise, the biscuit dough won't get fluffy and crisp on top.
