This might be one of the most unique and delicious sweet potato recipes you can make. It takes literally minutes to get you from leftover mashed sweet potatoes to these savory cakes that are super crispy on the outside yet delightfully soft on the inside.
Honestly, the texture of them is just downright addictive, and the flavor is too. My three year old daughter even loves these, so you know they have to be good.
Plus, to make things even tastier, I include an herb mayo for dipping. Seriously, don't skip it. It's my favorite part!
Something else I love is that they can be served for breakfast, lunch, or dinner! I recommend serving them for breakfast with this million dollar bacon, or something heartier like this homemade McGriddle.
As for lunch and dinner, they go really well with things like this country fried chicken, southern meatloaf, and no bean chili. Pair them with any of those dishes, and you'll have one delicious comfort food meal!
Ingredients
- Egg- to hold the ingredients together.
- Sea salt and black pepper- an essential seasoning for all savory recipes.
- Curry powder- for a tiny bit of spice.
- Dried thyme- to give the patties a slight herby flavort
- Wheat flour- the other main component that helps form the patties.
- Mashed sweet potato- the main ingredient that gives the patties substance and a delicious flavor. I like to use leftovers from my sweet potato puree, but you can use any recipe you want, or even canned sweet potatoes.
- Melted butter- to coat the patties for baking to give them a delicious golden crust.
- Mayo and mixed herbs- for the delicious homemade herb mayo sauce. I like to use Herbes de Provence.
How To Make Sweet Potato Patties
Step 1: Make the sweet potato mixture. First things first, preheat the oven to 400°F (200°C) and line a baking sheet with parchment paper. Then take out a large bowl and add the egg, sea salt, black pepper, curry powder, mashed sweet potatoes, flour, and dried thyme. Give those ingredients a good whisk, and continue whisking until everything is well combined and a smooth mixture forms. Also, if you notice your potatoes aren't mashed enough, you can use a potato mashed to smooth them out.
Step 2: Portion the patties. Using a 4-tablespoon scoop or ¼ measuring cup, scoop six patties out of the mixture onto your prepared baking sheet. Flatten the tops with a spatula to have them resemble a disk shape. Lastly, finish each one off with a brush of melted butter on top.
Step 3. Bake. Put the tray in the oven and bake for 15 minutes on one side. Carefully flip each one to the other side, brush the tops with more melted butter, and continue baking for about 10 more minutes or until golden brown and set.
Step 4: Make the mayo and serve. As soon as the sweet potato patties come out of the oven, mix the mayo and mixed herbs of your choice in a small bowl until combined. Serve warm with the dipping sauce, or any dipping sauce you want, like this McDonald's breakfast sauce, this Wingstop ranch sauce, or this Alabama white sauce - instead.
Can I fry these patties?
I personally think they turn out delicious baked and love that it's a healthier way to make them. With that said, yes, you can fry the patties. Cook them in a skillet with a little oil over medium heat for about 4 minutes on each side.
How I Recommend Storing The Sweet Potato Patties
In the fridge: I typically like to make a double batch of this recipe because the healthy sweet potato patties are so darn good leftovers. I'll store them in an airtight container or wrapped in plastic wrap and stored in a sealed bag in the fridge for about 4 days.
In the freezer: To keep them longer, I'll put them on a baking sheet in a single layer and freeze them until solid. Once they're frozen like this, just transfer them to a freezer-safe bag - or air-tight container and freeze for 6 months.
Reheating: I'll put the patties on a baking sheet and warm them in the oven at 350°F for about 5-10 minutes until warm. For frozen, add another 10 minutes of reheating time. You can also microwave them for about 15 seconds, but I think the oven gives the patties a better texture.
