In addition to tasting incredible, this casserole is also so, so easy to put together. In fact, just 10 minutes of prep time are all you need to make it!

    If you love the flavor of Reubens and the simplicity of casseroles, then you're going to fall head over heels for this Reuben casserole recipe.

    It takes all the flavors of a perfect Reuben sandwich and turns it into a layered casserole baked with a creamy thousand island dressing. Seriously, every bite is rich with savory, cheesy, creamy, and zesty flavors.

    After you've made this casserole recipe once, you'll be looking for excuses to make it again and again, it's just that good.

    And, as I mentioned a second ago, this baked Reuben casserole with Swiss cheese on top isn't just easy to eat, but it's also super easy to make. Just a few simple steps are all you'll need to follow to make it. Honestly, the hardest part of the whole process is just waiting for it to bake in the oven.

    By the way, if you're looking for some tasty sides to serve with this corned beef casserole, you really can't go wrong by making these McDonalds french fries or these honey-glazed carrots. The carrots are a fam favorite, especially with our 2-year-old.

    Ingredients

    Another reason to love this reuben casserole is that it's made with simple ingredients. In fact, if you love reuben sandwiches as much as I do, then you probably have most - if not all - of the ingredients you'll need to make it in your kitchen already!

    Anyway, here's everything you'll need to make this baked Reuben casserole:

    • 6-7 slices of rye bread
    • 1 lb. Thinly sliced corned beef
    • 12 oz. sauerkraut
    • 4 cups shredded Swiss cheese, divided
    • 1 ½ teaspoon coriander, caraway, or fennel seeds
    • 1 cup chopped dill pickles
    • 1 cup of full-fat milk
    • 3 eggs
    • ¼ cup thousand island dressing (or Russian dressing)
    • ¼ cup mustard

    Not too shabby, eh?! It's got pretty much everything that you'd need to make a sandwich and a few extra to make it a casserole.

    By the way, if you're craving a sandwich later this week for dinner, you have to make this grinder sandwich or chopped cheese sandwich. You really can't go wrong makin' either!

    How To Make A Reuben Casserole

    As I mentioned earlier, this recipe is not only delicious, but it is also super easy to make.

    All you have to do is layer your casserole dish with some rye bread cubes, corned beef, sauerkraut, swiss cheese, and pickles. Then, just make your savory, tangy egg mixture, pour it over everything in the dish, add your homemade bread crumbs, and bake!

    I know that may sound like a lot of steps, but I promise making Reuben casserole with this recipe is really simple. Honestly, it should take you only about 10 minutes to prep.

    Anyway, let's stop wasting time and get into the recipe!

    Step 1: Prep Work

    First things first, begin by preheating the oven to 350°F (180°C) and spraying an 11x7-inch baking dish with non-stick cooking spray.

    Then, cut 4-5 slices of rye bread into cubes and place the bread cubes into your prepared baking dish. Next, take the remaining rye bread and add it to a food processor - or high-power blender - pulse the bread pieces until you have coarse crumbs and set them aside.

    Step 2: Assemble The Casserole

    Once you have your bread cubes layered in the casserole dish, it's time to layer corned beef. So top the bread with half of the corned beef (or other deli meat). Then, layer the sauerkraut and dill pickles on top, followed by half of the coriander seeds and half of the swiss cheese.

    Next, repeat this process, gently pushing the top of the casserole to flatten it after you add the second layer.

    Step 3: Make The Egg Mixture

    Now that the base of the casserole is good to go, you can make the filling mixture.

    To do that, take out a large bowl and add the eggs, milk, thousand island dressing, and mustard to it. Then, give all of these ingredients a good mix until they fully combine.

    Once mixed, pour the egg mixture evenly over the casserole and top it with the homemade bread crumbs from earlier.

    Step 4: Bake The Casserole

    So, now that your corned beef casserole is fully assembled, cover it with aluminum foil and bake it for 45 minutes.

    Then, allow the casserole to cool for 5 minutes. Finally, slice it, serve it, and enjoy it!

    How To Store Reuben Casserole

    This recipe for Reuben casserole makes 6 large servings, so it's perfect for a big family dinner. And, odds are, you'll probably end up with some leftover corned beef.

    So, if you do, you can store the leftovers in an airtight container in the fridge for up to 3-4 days. Now, that is if you get the corned beef fresh from the grocery store that day since it'll only last for up to 4 days.

    Alternatively, if you want your leftover corned beef casserole to last even longer, you can store them in the freezer for up to 3 months.

    How To Reheat Reuben Casserole

    Once you're ready to enjoy this cheesy Reuben casserole with swiss cheese again, it's definitely best reheated.

    So, if you're heating multiple servings of this casserole at once, I definitely recommend transferring everything back to the casserole dish you cooked it in and warming it up in the oven for about 10-12 minutes at 350°F. Just heat it until the creamy sauce is hot and the cheese has remelted.

    On the other hand, if you just wanted to reheat a single serving, then you can reheat it in the microwave. I usually heat my leftover casserole in 30-second intervals until it's fully reheated - about 2 minutes should do the trick.

    Oh, and if you're reheating the frozen casserole, you'll want add a substantial amount of time to both of these reheating methods.

    1 lb. Thinly sliced corned beef

    12 oz. sauerkraut

    4 cups shredded Swiss cheese, divided

    1 ½ tsp coriander, caraway, or fennel seeds

    1 cup chopped dill pickles

    1 cup of full-fat milk

    3 eggs

    ¼ cup thousand island dressing (or Russian dressing)

    ¼ cup mustard

    Instructions

    1. Preheat oven to 350°F (180°C) and spray an 11x7-inch baking dish with cooking spray.
    2. Cut 4-5 slices of rye bread into cubes and place them into a greased casserole dish.
    3. Place the remaining bread in a food processor or high-power blender and process until coarse crumbs are formed. Set aside for later.
    4. Top the cubed bread with half the corned beef.
    5. Top the meat with sauerkraut and dill pickles. Add half the desired seeds and half the Swiss cheese.
    6. Repeat layers and push the casserole gently on top. 
    7. Whisk eggs with milk, thousand island dressing, and mustard in a bowl.
    8. Pour the mixture evenly over the casserole and top with the homemade breadcrumbs.
    9. Cover the casserole with aluminum foil and bake for 45 minutes.
    10. Cool the casserole for 5 minutes before slicing and serving.
